    Something about butterscotch brings back fond memories of childhood. These oatmeal cookies have the perfect soft chewiness from the oats and dark brown sugar. With a hint of cinnamon and sweet butterscotch chips, you get the best ever nostalgic cookie flavor.

    Iโ€™ve been baking cookies for multiple decades now and oatmeal cookies run a very close race with sugar cookies as my very favorite.  Yaโ€™ll love my coconut oatmeal cookies, butterscotch oatmeal bars and no flour monster cookies so Iโ€™m sharing today my favorite thick and chewy butterscotch oatmeal cookies.  

    With soft middles and lightly crispy edges, they are full of texture. And because I know you are busy, like me, you will love that this cookie recipe uses cold ingredients and needs no time to chill! Plus, I'm spilling my secret to keep your oatmeal scotchies thick.     ๐Ÿ’ญ why did my oatmeal scotchies spread so much?

    I have tested oatmeal cookies more times than I can remember. In my opinion, the oven temperature plays a huge roll. At the right temperature butterscotch oatmeal cookies bake nicely. If the oven is too hot, the butter will melt too quickly giving you a flat (but still delicious) cookie.

    I played with oats to flour ratio in this simple cookie recipe. The recipe was also tested at different oven temperatures, 350ยฐF, 375ยฐF and 400ยฐF. 350ยฐF is the magical temperature for this oatmeal butterscotch cookie recipe.

    Butter ~ I prefer to bake with unsalted butter so I can control the saltiness.  If you only have salted butter, leave out the kosher salt.  The butter is used cold, just cut it into small cubes.

    Butterscotch ~ a necessary ingredient for the classic oatmeal scotchie flavor. I tested with Nestle Toll House butterscotch morsels and Targetโ€™s Good and Gather butterscotch chips.  Both worked great!

    Cornstarch ~ my secret ingredient for thick oatmeal cookies!  If you donโ€™t have cornstarch, you can leave it out with no other changes to the recipe.  The cookies will spread more and wonโ€™t be as thick.

    Brown sugar ~ I prefer dark brown sugar, but light brown also works just fine.

    Old-fashioned rolled oats ~ use the spoon and level method to measure, if not using a scale. The spoon and level method is to spoon the oats into the measuring cup versus scooping.

    ๐Ÿช how to make no chill oatmeal cookies

    Preheat oven to 350ยฐF and prepare baking sheet pans with parchment paper or silicone baking mats.

    In a stand mixer with the paddle attachment beat the cold and cubed butter and kosher salt until softened.

    Scrape up and down the bowl. Then add the dark brown and granulated sugars and beat until light and fluffy.

    Scrape down your bowl and add pure vanilla extract or vanilla bean paste, the eggs, one at a time, mixing until combined.

    Scrape up and down your bowl again. Add the baking soda, cornstarch and cinnamon and mix on low until fully combined. Then add the all-purpose flour and blend until a few large streaks of flour remain.ย

    Scrape up and down the bowl.ย Add in the old-fashioned oats and butterscotch chips and mix on low until just combined. Using a cookie scoop (I use a size 30 scoop) place cookie dough on prepared baking sheet.

    This shows one of my test batches, baked at 400ยฐF. I was able to rescue the cookies back to round with the cookie scoot. The high temperature makes the butter melt too quickly, giving flat, crispy cookies.

    The cookies do spread a bit, I put 8 cookies per half sheet pan. Add a sprinkle of flaky sea salt for a salted version. Add a few extra butterscotch chips to the top of each baked cookie, if desired.

    Allow to cool on the pan for 5 minutes and then transfer to a cooling rack to cool completely.

    ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ expert tips for the best thick and chewy cookies

    My secret ๐Ÿคซ do the cookie scoot for thick and perfectly round cookies.ย  For oatmeal cookies, I typically start with a 3.5 inch biscuit cutter and then repeat a second scoot with a 3 inch biscuit cutter. This helps the oatmeal butterscotch cookies get nice and thick. See the recipe card if you need to learn how to do this.

    Follow the recipe ~ I develop recipes and test them multiple times, making lots of mistakes along the way. Once I am happy with a recipe, I test it a few more times to make sure it is consistent. Even one small change by you can change the outcome.

    Hold some butterscotch chips aside to press on top of the baked cookies to give them that bakery style look.

    Use a scale to measure your ingredients.  I know I say this all the time, but weighing your ingredients is the most accurate and will give the best results. This is the scale I use in my kitchen and if your budget is tight, this Escali scale is also fantastic!

    Do not grease your cookie pans, which can make your cookies spread more. Use parchment paper or silicone baking mats instead.

    Don't over bake the cookies! You want to remove the cookies from the oven when the edges are set and the middle is still a little soft, even a little raw looking for oatmeal and butterscotch cookies.  They will continue to bake and set up as they cool.

    ๐Ÿซ™ how to store

    Cookies stay fresh in an air-tight container at room temperature for up to 5 days.

    Baked oatmeal butterscotch cookies freeze well, in an airtight container or zip-top bag for up to 3 months.  This is by far my favorite way to store cookies for freshness. The cookies will thaw at room temperature in about 20-30 minutes.

    Ingredients

    • 1 cup unsalted butter cold and cubed (226g)
    • ยฝ teaspoon kosher salt
    • 1 cup dark brown sugar packed (200g)
    • 1 cup granulated sugar (200g)
    • 2 large eggs
    • 1 tablespoon vanilla bean paste or pure vanilla extract
    • 1 teaspoon baking soda
    • 2 teaspoons cornstarch
    • 1 teaspoon cinnamon
    • 1 ยพ cups all-purpose flour (219g)
    • 3 cups old-fashioned rolled oats (240g)
    • 1 ยฝ cups butterscotch chips (260g)
    • flaky sea salt if desired

    Instructions

    • Preheat oven to 350ยฐF and prepare baking sheet pans with parchment paper or silicone baking mats.
    • In a stand mixer with the paddle attachment beat the cold and cubed butter (1 cup/226g) and kosher salt (ยฝ teaspoon) on medium-high (speed 6 on KitchenAid) until softened, about 1-2 minutes. Scrape up and down the bowl.
    • Then add the dark brown (1 cup/200g) and granulated (1 cup/200g) sugars and mix on low until incorporated, then turn up to medium-high and beat until light and fluffy, about 3 minutes, stop and scrape the bowl at least once during this time.
    • Scrape down your bowl and add pure vanilla extract or vanilla bean paste (1 tablespoon) the eggs (2 large), one at a time, mixing on medium (speed 4) until combined, about 30-45 seconds per egg. Scrape up and down your bowl again.
    • Add the baking soda (1 teaspoon), cornstarch (2 teaspoons) and cinnamon (1 teaspoon) and mix on low for about 15-30 seconds, until fully combined. Then add the all-purpose flour (1 ยพ cups/219g) and blend on low until a few large streaks of flour remain.ย  Scrape up and down the bowl.ย 
    • Add in the old-fashioned oats (3 cups/240g) and butterscotch chips (1 ยฝ cups/260g) and mix on low until just combined.
    • Using a cookie scoop (I use a size 30 scoop.ย  Each cookie dough ball weighs 44g), place cookie dough on prepared baking sheet, spacing about 2 inches apart. The cookies do spread a bit, I put 8 cookies per half sheet pan.
    • Bake 12-14 minutes, until edges are lightly browned, but centers still look soft and unset. For a thicker finished cookie, do the cookie scoot when they are hot out of the oven. Use a biscuit cutter, cup or overturned bowl that is slightly larger than the cookies to โ€œscootโ€ the cookies back into a smaller, round circle. Add a sprinkle of flaky sea salt for a salted version. Add a few extra butterscotch chips to the top of each cookie, if desired. (I typically use a 3.5 inch biscuit cutter for my cookie scoot and then follow a second time with a 3 inch cutter, to create a thicker cookie).
    • Allow to cool on the pan for 5 minutes and then transfer to a cooling rack to cool completely.

    Notes

    * Yield of cookies will depend on the size scoop you use. A #30 scoop will yield 32 cookies.
    If using salted butter, omit the kosher salt.
    If you only have table salt, start with half the amount.
    The cornstarch can be left out with no other changes, but know the cookies may spread a little more.

    You are going to love this easy cupcake recipe because the cupcakes are moist and fluffy and get mixed in one bowl. It's completely non-fussy. 

    I wanted this recipe to be simple. No real planning ahead and something that doesn't create a mountain of dishes to do afterwards. Let's face it, we are all busy and want something we can mix together on a whim. 

    Cupcakes are a great option instead of cake for parties.  They are small, easy to transport and need no utensils for eating.  We love birthday cake blondies, birthday cake cookies and birthday cookie cake when we are looking for something other than cake. And if you are a cheesecake person, birthday cheesecake is always a great choice too!

    ๐ŸŽ‚ what does birthday cake taste like?

    This is one of those flavors that can be very subjective when you start asking around. I describe it as buttery, vanilla-y and sprinkle-y.

    This recipe uses imitation vanilla and almond extracts. While I usually encourage pure vanilla extract when baking, imitation vanilla really helps to bring the birthday cake flavor many of us associate with box mixes.

    ๐Ÿง ingredient notes 

    Use room temperature ingredients. Depending on the temperature of your kitchen you will want to pull out the milk, sour cream and eggs about 2 hours before baking. My kitchen is on the cooler side, so I usually go 2-3 hours before baking.

    I've been making this easy cupcake recipe for years and have cheated and not brought my ingredients to room temperature. This will work, but for the BEST texture I highly recommend bringing the cold ingredients to room temperature.

    Pro tip ~ to quickly bring eggs to room temperature, place them in a bowl of warm tap water for 5-10 minutes.

    To quickly bring the sour cream and milk to room temperature you can do quick (10-15 second) bursts in the microwave. Stir in between each burst and be careful NOT to heat them up, as this can change their structure.

    Vanilla ~ much like my birthday cake protein bars, I like an imitation vanilla in this recipe.ย  It helps create more of that โ€œfunfettiโ€ box cake flavor you might remember from childhood.ย  Imitation vanilla is also more friendly on the budget!ย  The original recipe for these birthday cupcakes called for pure vanilla extract and it can be used as a substitute.

    Almond extract ~ just a touch to bring more of that birthday cake flavor.  The original recipe also used butter extract, but in retesting I found the additional extract isnโ€™t needed.

    Sprinkles ~ Jimmies sprinkles (long and thin) or confetti quins (round and flat) are best for baking inside birthday cake cupcakes.  They tend to hold their shape and color the best once the cupcakes are baked. 

    I would stay away from nonpareils (tiny hard balls). They can bleed their color into the batter, making the cupcakes an ugly color.

    Please also note that sprinkles can go bad! They should be stored in an airtight container in a cool and dry place. Sprinkles last between 18 months and 3 years after opening.  Give the sprinkles the smell test and if they have an off or odd smell, throw them out and use a fresh container.

    Sour cream ~ use full-fat sour cream at room temperature for the best results.  If some water separates from the sour cream, just stir it back into the sour cream before adding it to the recipe.  Sour cream helps to bring extra moisture, creating a soft and tender birthday cupcake.

    ๐Ÿฅฃ how to make easy one bowl cupcakes

    Melt the butter and set aside to cool slightly. Then preheat the oven to 350ยฐF and prepare a 12 count muffin pan with cupcake liners. Set aside.

    In a large bowl, whisk the granulated sugar, brown sugar, kosher salt, eggs, imitation vanilla, almond extract and sour cream until well combined.

    Then whisk in the milk and once combined whisk in the melted and cooled butter.

    Add the baking powder and baking soda and whisk to combine. Then add the all-purpose flour and mix with a spatula until just a few streaks of flour remain. Now gently fold in the sprinkles.

    Divide the batter evenly between the 12 cupcake liners. They will be about โ…” full.

    Bake for 16-20 minutes or until a toothpick inserted in the center comes out mostly clean.

    Allow to cool completely before frosting.

    ๐Ÿฉท how to make the buttercream frosting

    Using a stand mixer with the paddle attachment or a handheld mixer, beat the butter and a pinch of salt on medium-high until smooth and creamy.

    Scrape down the sides of the bowl and add one cup of confectioners' sugar. Mix on low until incorporated. Then add the remaining cup of confectioners' sugar, imitation vanilla, almond extract and cream. Mix on low until fully incorporated. Add food coloring at this point, if desired.

    Increase the speed to medium-high and whip until light and fluffy, about 2-3 minutes, scraping the sides of the bowl as needed.

    First, make sure your cupcakes are completely cool before decorating!

    An American buttercream is the perfect frosting for birthday cupcakes. I used a Wilton 1M to pipe the frosting, but a Wilton 2D would also give you a similar look. You can also just hand frost them using a butter knife or an off set spatula. Top with additional sprinkles and enjoy!

    ๐Ÿซ™Storage tips

    The freezer is your best friend when wanting to bake easy birthday cupcakes ahead of time. Allow the cupcakes to cool completely, then store in an airtight container in the freezer for up to 3 months. Let the cupcakes defrost, then decorate them.

    I often will bake cupcakes the day before I need them. Then I freeze them overnight to lock the moistness in and decorate them the day I am serving.

    Birthday cupcakes can be stored at room temperature in an airtight container for 2-3 days. They can also be stored in an airtight container in the refrigerator, but they will be more prone to drying out.

    The cupcakes can be frozen in an airtight container for 2-3 months. Allow them to defrost at room temperature before serving. I freeze mine with buttercream all the time!

    Instructions

    • Melt the butter (ยฝ cup/113g) and set aside to cool slightly.
    • Preheat the oven to 350ยฐF and prepare a 12 count muffin pan with cupcake liners. Set aside.
    • In a large bowl, whisk the granulated sugar (ยพ cup/150g), brown sugar (ยผ cup/50g), kosher salt (ยผ teaspoon), eggs (2 large), imitation vanilla (1 ยฝ teaspoons), almond extract (ยฝ teaspoon) and sour cream (ยผ cup/60g) until well combined. Then whisk in the milk (ยฝ cup/120mL) and once combined whisk in the melted and cooled butter (ยฝ cup/113g).
    • Add the baking powder (ยฝ teaspoon) and baking soda (ยผ teaspoon) and whisk to combine. Then add the all-purpose flour (1 ยฝ cups/188g) and mix with a spatula until just a few streaks of flour remain. Now gently fold in the sprinkles (ยฝ cup/80-90*g).
    • Divide the batter evenly between the 12 cupcake liners. They will be about โ…” full. Bake for 16-20 minutes or until a toothpick inserted in the center comes out mostly clean.

    • Scrape down the sides of the bowl and add one cup of confectioners' sugar (120g). Mix on low until incorporated. Then add the remaining cup of confectioners' sugar (120g), imitation vanilla (ยฝ teaspoon), almond extract (ยฝ teaspoon) and cream (2 tablespoons/30mL). Mix on low until fully incorporated. Add food coloring at this point, if desired.
    • Increase the speed to medium-high and whip until light and fluffy, about 2-3 minutes, scraping the sides of the bowl as needed.
    • Spoon or pipe the frosting onto the tops of the cupcakes and enjoy!

    I tested these gingerbread blondies a few times to get the soft, chewy, brownie-like texture I was going for. I originally tested these blondie bars with only granulated sugar, like my gingerbread sandwich cookies. This created a firmer, less soft, more cake-like bar.  Since I was going for a brownie-like texture, I replaced the white sugar with dark brown sugar.

    My testing also included changing the ratio of flour and I added an egg. The end result is beautifully spiced blondie bars. And your house is going to smell amazing while they are baking!

    • Molasses ~ molasses brings robust flavor and comes in several varieties; from lighter to blackstrap molasses. I prefer a darker molasses and Wholesome organic is what I typically use in my kitchen.  I have also used Grandmaโ€™s brand.  The molasses helps with the chewy texture in the baked bars. Blackstrap molasses has a stronger and more bitter taste and I donโ€™t recommend using it unless a recipe specifically calls for it.
    • Brown sugar ~ The dark brown sugar also includes molasses and it brings extra chewiness and softness to these bars.  If you only have light brown sugar that will work.
    • Spices ~ ground cinnamon, ginger and cloves are the perfect blend of spices to give the best gingerbread blondie flavor.
    • White chocolate ~ this ingredient is optional, but adds a little sweetness and pretty decoration to these blondies.  You can drizzle the tops, dunk the tops or just leave them plain. As I always say, you do you!

    Start by preheating the oven to 350ยฐF/177ยฐC and line a 8x8 baking pan with parchment paper.

    In a medium to large bowl, whisk together the melted butter, brown sugar, granulated sugar and kosher salt until well combined. Scrape the bowl.

    Then whisk in the eggs, vanilla and molasses. Scrape up and down the bowl as needed and whisk until combined.

    Now whisk in the cinnamon, ginger and cloves until combined. Then add half the flour and use a spatula to combine until most of the flour is incorporated. Stop and scrape the bowl and then add the remaining flour, mixing until the batter comes together.

    The batter is thick. Drop the batter into the prepared baking pan and smooth to an even layer. An offset spatula is helpful here.

    Bake in the preheated oven until the edges have lightly browned and a tester in the center comes out with just a few moist crumbs. You do not want a clean/dry tester, which means the blondies are over baked.

    Allow to cool in the pan on a wire cooling rack.

    Once the gingerbread blondies have cooled, melt the white chocolate and drizzle it (or dunk them) over the tops of the blondies.

    ๐Ÿ†˜ troubleshooting tips

    For the best blondie bars, I recommend baking in a light colored 8x8 baking pan.  Dark pans absorb more heat and can cause the edges to burn while the middle is undercooked.  

    Glass pans also distribute the heat differently and can have similar results to dark colored baking pans.  If baking in glass, itโ€™s recommended to lower the temperature by 25ยฐF and bake for a few minutes longer.

    This recipe for gingerbread blondies makes blondies with a brownie-like texture.  To create this texture, be sure to not over mix the batter and donโ€™t over bake! If you like a more gooey center, bake them a minute or two less.  If you prefer a firmer, more cake-like texture, bake a minute or two longer.

    Gingerbread blondies are easy to over bake due to their dark color, which will make them crunchy instead of soft. Bake until the edges are set and the middle still looks a little soft.

    Remember your oven is different from mine and the baking time may be slightly different. I use this oven thermometer to ensure my oven is at the temperature I think it is.

    Garnish the tops of the baked gingerbread blondies with chopped crystallized ginger.

    For a cream cheese drizzle, use the icing from my red velvet brownies.

    If you like a layer of frosting on your blondie bars, lemon buttercream, cream cheese frosting (from my pumpkin snack cake) or brown sugar frosting (from my brown sugar cupcakes) would all be delicious.

    Store blondies in an airtight container at room temperature for up to 5 days.

    The gingerbread blondies can also be frozen in an airtight container for up to three months. Allow to defrost at room temperature before serving (about 20 minutes).

    Ingredients

    • ยฝ cup unsalted butter melted (113g)
    • ยพ cup dark brown sugar packed (150g)
    • ยผ cup granulated sugar (50g)
    • ยฝ teaspoon kosher salt
    • 2 large eggs room temperature
    • 1 teaspoon pure vanilla extract
    • ยผ cup molasses (70g)
    • 2 teaspoons ground cinnamon
    • 1 ยฝ teaspoons ground ginger

    • 1 ยพ cups all-purpose flour (219g)

    Instructions

    • For the gingerbread blondies: preheat the oven to 350ยฐF/177ยฐC and line a 8x8 baking pan with parchment paper
    • In a medium to large bowl, whisk together the melted butter (ยฝ cup/113g), packed brown sugar (ยพ cup/150g), granulated sugar (ยผ cup/50g) and kosher salt (ยฝ teaspoon) until well combined. Scrape the bowl.
    • Then whisk in the eggs (2 large), vanilla (1 teaspoon) and molasses (ยผ cup/70g). Scrape up and down the bowl as needed and whisk until combined, about 1 minute.
    • Now whisk in the cinnamon (2 teaspoons), ginger (1 ยฝ teaspoons) and cloves (ยฝ teaspoon) until combined.
    • Then add half the flour (total flour amount is 1 ยพ cups/219g) and use a spatula to combine until most of the flour is incorporated. Stop and scrape the bowl and then add the remaining flour, mixing until the dough comes together. The batter is thick.
    • Drop the batter (itโ€™s thick) into the prepared baking pan and smooth to an even layer.
    • Bake for 20-25 minutes in the preheated oven or until the edges have lightly browned and a tester in the center comes out with just a few moist crumbs. You do not want a clean/dry tester, which means the blondies are over baked. Allow to cool in the pan on a wire cooling rack.
    • For the white chocolate drizzle: melt the white chocolate (1.5 ounces/43g) with your preferred method. I like using a double boiler. Drizzle the white chocolate over the tops of the blondies. If you want to cover the entire top of each gingerbread blondie, increase the white chocolate to 3 ounces/86g.

    Use a dark molasses (I use Wholesome unsulphured), please avoid blackstrap molasses as it is too bitter for this cookie recipe.

    Butterscotch oatmeal bars are thick and chewy and so quick and easy to make.   A hint of cinnamon and sweet butterscotch chips combine with oats to create an explosion of flavors and textures. A simple streusel topping takes the bar cookies from boring to irresistible!

    As a busy mama and self taught baker, dessert bar recipes save me all the time! Iโ€™ve been making blondies and bar cookies for decades and know you will love the simplicity of this recipe. The butterscotch chips bring a nostalgic flavor that is balanced with a sprinkle of sea salt.

    Oatmeal cookies are another kryptonite for me and it took a LOT of self control to not eat an entire batch by myself.  Big E declared these bars โ€œthe bestโ€ and wouldnโ€™t let me give the final test batch away! 

    Much like my Nordy bars and brown butter oatmeal cookies, you will love the soft and chewy texture. My recipe is made using brown sugar; which helps with the soft texture. The recipe is also made without chocolate chips, so the butterscotch can really shine, like in my butterscotch ice cream, oatmeal butterscotch cookies and butterscotch nut bars.

    Whether you call them butterscotch oatmeal bars or oatmeal scotchies, I think you will agree with Big E and call them the best too!

    I tested this recipe with old fashioned rolled oats, quick oats and a combination of both. All old fashioned oats won in the taste and texture tests.

    • Oats ~ old fashioned rolled oats are needed for this recipe. The rolled oats provide the chewy and thick texture I wanted for these bar cookies.  One of my test batches was with quick oats and they will work, if itโ€™s all you have.  Quick oats make a denser cookie bar. You can also do a combination, which gives nice texture too.
    • Brown sugar ~I love the extra richness that dark brown sugar brings to these bar cookies, but if you only have light brown sugar that works fine as well.
    • Cinnamon ~ ground cinnamon compliments the butterscotch and helps give this easy recipe another layer of flavor.
    • Butterscotch chips ~ kind of hard to have butterscotch bars without butterscotch!  I tested with Nestle Toll House butterscotch morsels and Targetโ€™s Good and Gather butterscotch chips.  Both worked great!
    • Flaky sea salt ~ brings balance to the sweetness of the butterscotch chips.  It can be left out, but I highly recommend it!  Murray River salt is what I use.

    Start by making the oatmeal streusel and set aside.

    Now preheat oven to 350ยฐF (177ยฐC) and line a 8x8 baking pan with parchment paper.

    Using a stand mixer with the paddle attachment or a hand held mixer beat together the unsalted butter, kosher salt, brown sugar and granulated sugar. Beat until smooth and light, about 3 minutes.

    Scrape up and down the bowl, then add in the egg and vanilla and mix on medium until fully incorporated, about 1 minute.

    Then sprinkle the baking soda and baking powder over the cookie dough and mix on medium-low until combined.

    Now scrape the bowl and add the all-purpose flour and old-fashioned rolled oats and mix on low until a just a few streaks of flour remain. Stir in the butterscotch chips with a spatula until combined.

    Now press the dough into an even layer in the prepared pan.

    Then sprinkle the streusel evenly over the top of the cookie dough. Top with flaky sea salt, if desired.

    • Make the streusel: in a small to medium bowl mix together the old-fashioned rolled oats (ยฝ cup/50g), brown sugar (2 tablespoons/25g) and melted unsalted butter (1 ยฝ tablespoons/21g). Then stir in the butterscotch chips (ยผ cup/45g) and set the streusel aside.
    • Make the oatmeal cookie bars: preheat oven to 350ยฐF (177ยฐC) and line a 8x8 baking pan with parchment paper.

    *I highly recommend adding some flaky sea salt. Butterscotch chips are extra sweet and the extra salt helps to balance the flavors.
    If you'd like to add chocolate - mini chocolate chips (or regular size) can be added with the butterscotch chips before baking. Reduce the butterscotch chips to ยฝ cup/90g and use ยผ cup chocolate chips.
    If you would like to add nuts, ยผ cup of nuts can be added. Reduce the butterscotch chips to ยฝ cup.

    Christmas growing up always included watching Rudolph the Red Nose Reindeer, A Charlie Brown Christmas and The Grinch that Stole Christmas.ย  This was before DVRโ€™s or even VCRโ€™s, so it was always fun to stay up late and watch the show on TV!ย  These cookies bring back the nostalgia of the season for me.

    โ™ฅ๏ธ where do I buy the red hearts?

    Many grocery stores or craft stores (like Michaelโ€™s or Hobby Lobby) sell sprinkles in the cake decorating/baking section.  The red hearts in these photos are from Trader Joeโ€™s Valentineโ€™s Day sprinkle mix.  I also snuck in a few Brachโ€™s cinnamon imperial hearts.

    This cookie recipe used melted butter, which gives them a nice chewy texture. It also means not having to plan ahead! #winning!

    • Green food coloring ~ a gel based food coloring will give the best color with just a few drops.  I like Chefmaster leaf green.  2-3 drops gives a nice green color.  The green will lose some of its brightness while the cookies bake. 
    • Granulated sugar ~ granulated {or white} sugar brings that classic sugar cookie flavor. Used in the cookie dough and to roll the cookies in before baking.
    • Vanilla ~ adds the classic sugar cookie flavor. You can use vanilla bean paste as a substitute.  To give the Grinch cookies a flavor variation - add ยผ-ยฝ teaspoon of almond extract or peppermint extract.  The addition of almond extract is my favorite!
    • Baking powder ~ helps to create thick and chewy holiday sugar cookies. I recommend an aluminum free baking powder for the best tasting cookie.
    • Red hearts ~ use either heart sprinkles or Brachโ€™s cinnamon imperials that you might have leftover from making cinnamon blondies ๐Ÿ˜‰
    • Confectionersโ€™ sugar ~ if youโ€™d like to make with powdered sugar; use it to roll the cookie dough balls before baking.ย  Granulated sugar gives Grinch sugar cookies a little sparkle. Powdered sugar gives them more of a โ€œsnowyโ€ finish.ย  You could also skip either of those sugars and use a green sanding sugar.

    ๐Ÿฅฃ how to make no chill sugar cookies

    Preheat the oven to 350ยฐF and line one baking sheet with parchment paper or a silicone baking mat.

    Allow the butter to cool for 5 minutes.  Then in a medium-large bowl, add melted butter, granulated sugar and kosher salt and stir until well combined.

    Now stir in the egg yolk, vanilla extract and green food coloring, making sure everything is very well combined.  I recommend going a little darker than you think with the green coloring.  It will dull a little once baked.

    Next add the baking powder and mix to combine.

    Finally stir in the flour until just combined.

    Take roughly 1 tablespoon of dough and roll it into a ball, then roll in granulated sugar, roll in your hands again and roll a second time in the sugar.

    Place on the prepared baking pans, spacing 2 inches apart. Then lightly flatten each cookie with a flat bottomed cup to about ยผ inch thickness.

    Bake for 8-10 minutes, the edges will be set and the centers may still look a little soft.

    โ€œScootโ€ the cookies with a biscuit cutter or cup when they are hot out of the oven, if desired.  Then lightly press a red heart into each cookie.

    The grinch cookies can be rolled in confectioners' (also known as powdered sugar) or granulated sugar.

    The top cookie is with powdered sugar and the bottom cookie is with granulated sugar.

    The dough can be soft. If you are having trouble working with it, let it rest 2-3 minutes and it should be easier to work with.

    If you want to do more decoration, I would recommend frosting with buttercream.  For a frosted sugar cookie, frost with my favorite American buttercream.  I would bake the cookies and allow them to cool completely before decorating.

    You can also use the above frosting with piping tips. This sugar cookie recipe makes drop cookies, so you will be decorating a round cookie.ย  The buttercream can also be spread over the cookie with a knife or off set spatula.

    Many sprinkle brands also sell โ€œWhovilleโ€ sprinkle mixes, which would be super cute over buttercream!

    ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ expert tips for the best simple sugar cookies

    • Weigh your ingredients ~ I know I say this all the time, but weighing your ingredients is the most accurate and will give the best results. This is the scale I use in my kitchen.ย  If you need a more economical kitchen scale, this Escali scale is also a great option.
    • Use real butter, not margarine for the best tasting cookies; sugar cookie recipes are a good time to splurge on a premium butter like Plugrร  or Kerrygold.
    • Do not grease your cookie pans, which can make your cookies spread more. Use parchment paper or silicone baking mats instead.
    • Bake on lighter colored baking pans as the Grinch cookies will bake more gently, which equals a softer cookie (these USA Pans are my favorite).
    • Don't over bake the cookies. In my opinion, this is the number one reason home baker's cookies don't come out like bakery cookies. To keep the cookies soft and chewy we want the centers slightly underdone. They will continue cooking as they cool and the centers will firm up. ย Please remember your oven is different from mine and baking times may vary slightly.
    • When adding the red candy heart, lightly press them into the cookie when they are hot from the oven.  
    • "Scoot" the cookies when they come out of the oven with a large round cookie cutter (I use this Ateco cutter set) or glass if you want perfectly round cookies. Scooting the cookies also helps to make them a bit thicker.

    Cookies can be stored at room temperature in an airtight container for 3 - 4 days.

    You can also freeze the baked cookies once they have completely cooled. This is by far my favorite way to store cookies! The no chill Grinch cookies can go in a zip top bag or an airtight container; they will stay fresh in the freezer for up to 3 months (often longer).  This is a great option if you are baking lots of cookies for cookie trays/boxes or cookie exchanges!

    Allow to defrost at room temperature, this takes about 15 minutes.

    Ingredients

    • ยพ cup granulated sugar (150g)
    • ยฝ cup unsalted butter melted (113g)
    • ยผ teaspoon kosher salt
    • 1 large egg yolk
    • 2 teaspoons pure vanilla extract
    • green gel food coloring 2-3 drops
    • ยผ teaspoon baking powder
    • 1 cup + 2 tablespoons all-purpose flour (141g)
    • ยผ cup granulated sugar* for rolling (50g)
    • 17 red heart sprinkles or cinnamon hearts

    Instructions

    • Preheat the oven to 350ยฐF and line two baking sheet pans with parchment paper or silicone baking mats.
    • Melt the butter (ยฝ cup/113g) and allow to cool for five minutes. In a medium bowl, add the melted butter, granulated sugar (ยพ cup/150g) and kosher salt (ยผ teaspoon) and stir until well combined. Now stir in the egg yolk (1 large yolk), vanilla (2 teaspoons) and green gel food coloring (I use 2-3 gel drops), making sure everything is very well combined.
    • Next add the baking powder (ยผ teaspoon) and mix to combine. Finally stir in the flour (1 cup + 2 tablespoons/141g) until just combined.
    • Take roughly 1 tablespoon of dough (about 25g dough per cookie) and roll it into a ball, then roll in granulated sugar, roll in your hands again and roll a second time in the sugar. Place on the prepared baking pans, spacing 2 inches apart. Then lightly flatten each cookie with a flat bottomed cup to about ยผ inch. ย (The dough can be quite soft. If you are having trouble working with it, let it rest 2-3 minutes and it should be easier to work with).
    • Bake for 8-10 minutes, the edges will be set and the centers may still look a little soft. โ€œScootโ€ the cookies with a biscuit ring or cup when they are hot out of the oven, if desired. This helps to thicken the cookies and makes them perfectly round. Press the red heart into each cookie when hot from the oven.

    Notes

    *Confectioners' (powdered sugar) can also be used. Granulated sugar gives the finished cookie more sparkle, while confectioners' sugar gives more of a "snowy" look. A green sanding sugar can also be substituted.
    Cookies can cool completely on the baking sheet or can be moved to a wire cooling rack after 5 minutes.ย ย

    Coconut is a well loved ingredient in the two sugar bugs household. Coconut cake is my birthday request every year and coconut cream pie has been known to be our Easter dessert. It only seemed fitting to combine coconut with the classic chocolate chip cookie!

    As a self diagnosed cookie monster, with decades of cookie baking in my back pocket, I adore a quick and easy drop cookie recipe! This is a no mixer needed, uses melted butter recipe, which makes these coconut chocolate chip cookies simple to make.  

    The texture of these chocolate chip cookies is soft with a chewy center and they have a rich and sweet flavor, much like my white chocolate coconut cookies, coconut sugar cookies and lemon coconut cookies. If you happen to like oatmeal in your cookies, try these coconut oatmeal cookies.

    Coconut - add flavor and texture.  Sweetened coconut flakes can be found in the baking aisle.  This recipe is quick and easy, so no need to toast the coconut.  I did not test unsweetened coconut in this cookie recipe.  I worry that the cookies wonโ€™t be as soft and chewy as unsweetened coconut is a drier ingredient, which will affect the texture of the cookies.

    Chocolate - milk chocolate or dark chocolate chips can be used, you do you and use your favorite.  A chopped chocolate bar can also be used, if you prefer more melty chocolate in your cookies.

    Sugar - a mixture of granulated (white) sugar and dark brown sugar adds a greater depth of flavor and more chewiness to the drop cookies.

    Unsalted butter - no need to let it come to room temperature, we are going to melt it. Just let it cool for five minutes before proceeding with the recipe.

    Preheat oven to 350ยฐF and prepare two sheet pans with parchment paper or silicone baking mats and set aside.

    In a medium to large bowl, melt the butter and allow it to cool for 5 minutes. Add the dark brown sugar, granulated sugar and kosher salt and mix until fully incorporated.

    Then add the flour and stir until just a few streaks of flour remain. Fold in the both the chocolate chips and sweetened coconut flakes. If desired, save aside a few of the chocolate chunks to press into the tops of the cookies before baking.

    Use about 2 tablespoons of dough per cookie (I like using a size 30 scoop) and place the dough onto the prepared baking sheets, spacing them about 2 inches apart.

    Bake the cookies for 10-12 minutes, until the edges are set. Allow the cookies to rest on the pan 2 minutes, then remove to a wire rack to cool completely. If desired, sprinkle with sea salt when hot from the oven.

    Follow the recipe ~ I develop recipes and test them multiple times, making lots of mistakes along the way. Once I am happy with a recipe, I test it a few more times to make sure it is consistent. Even one small change by you can change the outcome.

    Weigh your ingredients ~ I know I say this all the time. Weighing your ingredients is the most accurate and will give the best results. This is the scale I use in my kitchen, but if you are looking for a more economical option this Escali digital scale is also a great one.

    Hold some chocolate chips or chopped chocolate pieces aside to press on top of the cookies prior to baking. This gives them that bakery style look.

    Don't over bake the cookies! Remove the cookies from the oven when the edges are set and the middle is still a little soft.

    Use the cookie scoot for perfectly round and thick cookies. Use a biscuit/round cookie cutter, glass or bowl that is slightly larger than the cookies and scoot them back into a thicker and perfectly round cookie. Do this when the cookies are still hot right out of the oven.

    Cookies stay fresh in an air-tight container at room temperature for up to 5 days.

    Coconut chocolate chip cookies freeze well, in an airtight container or zip-top bag for up to 3 months.  This is by far my favorite way to store cookies for freshness. The cookies will thaw at room temperature in about 20-30 minutes.

    As with every recipe I post, I tested this cake multiple times to perfect the texture and flavor. This chocolate chip cake embraces everything I want recipes on two sugar bugs to convey. The cake has an old fashioned feel, with brown sugar and extra vanilla giving it a taste similar to chocolate chip cookies. 

    The cake is sweet, soft, packed with mini chocolate chips, like my chocolate chip cupcakes. And much like my sprinkle cake, it has a ridiculously easy, no frosting topping.

    I started with a butter based cake batter, but found the combo of sour cream and oil made this cake even easier to make; while also giving it the softest texture.  Here are a few ingredients that help to create this moist cake.

    Chocolate chips ~ I used semisweet mini chocolate chips. The mini size is perfect because they spread more evenly through the cake batter.  Plus they are a nice small size for biting into with the soft vanilla crumb on the snack cake.  You also donโ€™t have to do anything special to keep the mini chips from sinking to the bottom of the cake!

    Brown sugar ~ a higher amount of brown sugar really helps to bring home the chocolate chip cookie flavor.  Brown sugar also adds extra moisture to the crumb. Dark brown sugar will give the richest flavor, but light brown sugar can be substituted.

    Vanilla extract ~ a full tablespoon of vanilla adds flavor and gives this cake chocolate chip cookie dough flavor vibes.  For the best flavor, use pure vanilla extract.

    Sour cream ~ making cakes with sour cream brings extra moisture by working to make the gluten strands in the flour shorter, which results in a tender and soft cake. For the best from scratch cake, use full fat sour cream and bring it to room temperature. 

    Oil ~ the oil brings a ton of moisture to the snack cake, creating a super soft, moist and tender crumb.  Vegetable oil or canola oil can be used. 

    Eggs ~ should be at room temperature to give the cake the best rise and soft texture.

    Pro tip ~ to quickly bring eggs to room temperature, place them in a bowl of warm tap water for 5-10 minutes.

    Preheat the oven and butter a 9-inch round pan and place a parchment round in the bottom.

    In a large bowl, whisk together the granulated sugar, brown sugar, kosher salt, vegetable oil, eggs, sour cream and vanilla.

    Then whisk in the baking powder and baking soda until fully combined.

    Now add the flour and gently mix together with a spatula. When the batter is still showing a few streaks of flour, add the mini chocolate chips and mix until the batter comes together.

    Pour the batter into the prepared pan and sprinkle 2 tablespoons of mini chocolate chips over the top of the cake. Now sprinkle two tablespoons of granulated sugar over the chocolate chips.

    Bake in the preheated oven for 30-35 minutes or until a toothpick in the center comes out with just a few moist crumbs. The sugar top gets a little crunch to it, so be sure to push the toothpick through it to test.

    Allow the chocolate chip cake to cool 15-20 minutes before removing it to a wire rack to cool completely. The cake can also cool completely in the pan.

    What baking pan do I need?

    I recommend a 9-inch round pan.  An 8x8 pan can be used, if you prefer a square cake.  If you only have an 8-inch round cake pan, the cake will be a little taller and will need a little more time to bake.  

    For a small batch chocolate chip cake, I have successfully halved the recipe and baked this cake in a 6-inch round pan.

    How should I store this chocolate chip snack cake?

    Store the cake at room temperature for up to five days.  The cake can also be frozen for up to two months. You can either wrap the whole thing tightly in a double layer in plastic wrap. Or cut the cake into individual slices once cool; then wrap each slice tightly in a double layer of plastic wrap.

    Allow to defrost at room temperature before serving. The chocolate chip cake tastes best at room temperature.

    Don't over bake the cake. Remember your oven is different from mine and baking times may vary a little. The homemade chocolate chip snack cake is done when a toothpick inserted in the center comes out with just a few moist crumbs.  The sugar top gets a little crunch to it while baking, so be sure to push the toothpick through it to test.

    Whether it's crackers, cookies a tart or pie; pecans are a well loved baking ingredient {at least at my house!}

    With decades of cookie baking behind me, I am always in for a simple drop cookie recipe, like these lemon coconut cookies. No mixer is needed, which makes them quick and easy to make.  

    The texture of these pecan maple cookies is the best!  They are not dry or cakey, but soft with a chewy center and they have a rich flavor, much like my chocolate chipless cookies. They look like they came out of a bakery, but are seriously easy to make!

    ๐Ÿ’ฌ do I have to use maple extract?

    I don't recommend it skipping it!ย  Maple syrup does not provide a strong maple flavor all on its own.ย  The cookies will still be soft and taste great, but they wonโ€™t have much maple flavor. I use McCormick's maple extract.

    Pecans ~ add flavor and texture.  I prefer to toast the pecans, which is included in the recipe card.  If you want to skip the toasting step, you can, but youโ€™ll lose some of the rich pecan flavor.  For a maple walnut cookie, feel free to substitute the pecans with toasted walnuts.

    Sugar ~ dark brown sugar adds a greater depth of flavor and more chewiness to the drop cookies.

    Maple syrup ~ pure maple syrup is what we need for these maple pecan cookies.  Please avoid pancake syrup as it doesnโ€™t have the same burst of maple flavor that you get with pure syrup.

    Maple extract ~ in testing this drop cookie recipe, I found maple syrup on its own didnโ€™t impart much maple flavor.  I had to play with how much extract to add, but 2 teaspoons really helps to bring home the maple flavor.

    ๐Ÿฅฃ how to make without a mixer

    Start by toasting and chopping the pecans.

    In a medium to large bowl, add the melted butter and allow to cool for 3-5 minutes. Then add the dark brown sugar, pure maple syrup and kosher salt and mix until fully incorporated.

    Add the eggs, vanilla and maple extract. Now stir until the mixture is combined and smooth.

    Sprinkle the baking soda and cornstarch over the mixture and stir well. Then add the flour in three additions, with the pecans with the final flour and stir until the dough comes together. Hold aside some pecan pieces, if you'd like to top the cookie dough balls with them.

    Use about 2 tablespoons of dough per cookie {I like using a size 30 scoop} and place the dough onto a plate or cookie sheet pan that will fit in your freezer, the dough is soft and may not fully hold it's shape. If you held aside pecan pieces, press them into the dough ball tops now. Freeze the cookie dough portions for 20 minutes.

    While you freeze the dough, preheat oven to 350ยฐF {unless already on from toasting the pecans} and prepare two sheet pans with parchment paper or silicone baking mats and set aside. Once the dough has chilled, place 10 - 11 cookies on each prepared baking sheet, spacing them about 2 inches apart. Bake one pan at a time for 10-12 minutes or until the edges are set. You want the cookies to look a little soft in the middle

    ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ tips for the best maple pecan cookies

    Let the butter cool for a few minutes before adding the sugar and maple syrup to keep the baked cookies from being overly greasy.

    For the best flavor and texture, use pure maple syrup AND maple extract.

    Save aside some of the toasted pecan pieces for pressing on the tops of the cookie dough balls before baking.  This gives them that bakery worthy look.

    Use the cookie scoot for perfectly round and thick cookies. Use a biscuit/round cookie cutter, glass or bowl that is slightly larger than the cookies and scoot them back into a thicker and perfectly round cookie. Do this when the cookies are still hot right out of the oven.

    Soft and Chewy Maple Pecan Cookies

    Ingredients

    • 1 cup pecan pieces* toasted (120g)
    • 10 tablespoons unsalted butter (140g), melted
    • 1 cup packed dark brown sugar** (200g)
    • 5 tablespoons pure maple syrup (75g)
    • ยฝ teaspoon kosher salt
    • 2 large eggs room temperature
    • 1 teaspoon pure vanilla extract
    • 2 teaspoons maple extract
    • 1 teaspoon baking soda
    • 2 teaspoons cornstarch
    • 2 ยฝ cups all-purpose flour (312g)

    Instructions

    • To toast the pecans: Preheat oven to 350ยฐF and prepare baking sheet pans with parchment paper or silicone baking mats. Toast the pecans (1 cup/120g) on a parchment or aluminum foil lined baking pan for 5-8 minutes. Allow the nuts to cool and chop into small pieces before making the cookies. Can be done a day or two ahead of time.
    • In a medium to large bowl, add the melted butter (10 tablespoons/140g) and allow to cool for 3-5 minutes. Then add the dark brown sugar (1 cup/200g), pure maple syrup (5 tablespoons/75g) and kosher salt (ยฝ teaspoon) and mix until fully incorporated.
    • Add the eggs (2 large), vanilla (1 teaspoon) and maple extract (2 teaspoons). Stir until the mixture is combined and smooth.
    • Sprinkle the baking soda (1 teaspoon) and cornstarch (2 teaspoons) over the mixture and stir well. Then add the flour (2 ยฝ cups/312g) in three additions, with the pecans with the final flour and stir until the dough comes together. Hold aside some pecan pieces, if you'd like to top the cookie dough balls with them.

    *The best way to measure pecans is by weight.

    ***use aย biscuit/round cookie cutter, glass or bowl that is slightly larger than the cookies and scoot them back into a thicker and perfectly round cookie. Do this when the cookies are still hot right out of the oven.
    If you only have table salt, use half the amount.
    If you don't have cornstarch you can leave it out with no other adjustments.
    Cookie dough can be prepared and covered and refrigerated overnight, then baked the next day; the cookies may need an extra minute of baking time if chilled. Cookie dough can also be formed into balls and frozen for up to one month; let the cookie dough sit out at room temperature until the oven preheats. The cookies may need an extra minute of baking time if baked frozen.
    Store cookies in an airtight container at room temperature for 3-4 days. The maple pecan cookies also freeze well for up to three months. Store in an airtight container or zip-top bag in the freezer. Allow to come to room temperature before serving (about 30 minutes).

    Since cake recipes from scratch are always a winner in my book, Iโ€™ve got this updated two sugar bugs original for you. This cookie butter cake is the first recipe I developed and published!!! As a busy mama and self taught baker, this one looks impressive, but comes together easily.ย ย 

    The two cake layers are lightly spiced with biscoff cookies baked in them.  More flavor is packed in the filling with cookie butter spread and more cookies.  The dreamy buttercream also has lovely hints of biscoff.  Much like my cookie butter cupcakes, cookie butter cake roll, biscoff blondies and biscoff icebox cake, this recipe is loaded with flavor!

    ๐Ÿ’— what makes this biscoff cake special

    I created this cake because I love the cookie butter flavor and wanted it to shine through in every bite.  You get cookies {ground to flour consistency} in the batter, a layer of pure cookie butter and cookie butter buttercream with some crushed cookies between the layers.  It's cookie butter heaven!!! Don't let the Swiss meringue buttercream scare you, the lightness of the frosting is key to letting the cookie butter be the star of the show.

    ๐Ÿ’ญ what the heck is cookie butter?

    Cookie butter is a spread with a consistency like peanut butter, but it is made with spice cookies, called Biscoff or Speculoos.  The flavor is reminiscent of a subtle gingerbread with hints of cinnamon, nutmeg and not so much molasses. You can use it as an alternative to nut butters or chocolate spreads. Cookie butter is also nut free, so itโ€™s an option for those with nut allergies.

    I tested a range of ingredients to create the best homemade version of this cookie butter cake.ย  Here are a few that make this cake extra special.ย

    Biscoff or speculoos cookies ~ I have baked this cake with both Lotus biscoff cookies and Trader Joeโ€™s speculoos cookies.  Both work and are important for bringing the cookie butter flavor to this cake.

    Buttermilk ~ use store bought buttermilk and have it at room temperature before baking. It will give the biscoff cake more flavor and moisture than a homemade version. Kefir can be substituted.  I include how to make your own in the recipe card notes, but suggest using store bought for the best results.

    Cookie butter ~ Trader Joe's cookie butter and Lotus Biscoff Cookie Butter spread are the two brands that I regularly use.  You will want the creamy version for the frosting and creamy or crunchy can be used for the filling.

    Eggs ~ should be at room temperature to give the cake the best rise and soft texture.  The egg whites for the cookie butter buttercream will separate better when cold and do not need to be room temperature.  I originally developed this recipe with extra large eggs, but have notes in the recipe card for how to substitute large eggs.

    ๐Ÿฅฃ how to make this homemade cake

    Preheat the oven to 350ยฐF.

    Prepare two 8-inch round baking pans; butter the pans, line the bottom of each pan with parchment paper, butter again and dust lightly with flour. Set aside.

    Place 6 biscoff/speculoos cookies in a food processor and pulse several times to reach a flour-like consistency.

    In a bowl, whisk together all-purpose flour, ground biscoff cookies, baking powder and kosher salt. 

    In the bowl of a stand mixer fitted with the paddle attachment, cream butter and both sugars until light and fluffy. Scrape down the bowl.

    Add your eggs and vanilla extract and mix on medium until well combined.

    With the mixer on low, add the flour mixture and buttermilk in three alternating additions, beginning and ending with the dry, being careful not to over mix your batter.

    Divide your batter equally between the two prepared pans and bake until the tops are lightly browned and a toothpick or cake tester comes out mostly clean.

    Cool cake layers in pans placed on a wire rack for 10-15 minutes before turning them onto a wire rack to cool completely.

    ๐Ÿฐ how to fill, frost and decorate

    Make the cookie butter swiss meringue buttercream once the cakes are cool.ย  If you need photos and trouble shooting for Swiss meringue buttercream, see this chocolate buttercream post.

    Once the cakes are cool, level with a large serrated knife or cake leveler, if needed. The cakes bake fairly flat, so I donโ€™t usually need to do this.

    Place one layer on a serving plate, cake stand or a cardboard cake round, topside up. Spread cookie butter evenly over the layer.

    Add about 1 cup of the frosting and spread evenly over the cookie butter.

    Then sprinkle the 6 crumbled biscoff cookies over the buttercream and gently press into the frosting.

    Place the second layer, topside down, on top of the filling. Lightly frost the cake to create a crumb coat. Chill cake for 30 minutes to set the crumb coat.

    Frost with remaining buttercream, smoothing evenly over the top and sides of the cake.

    Decorate with swirls of frosting around the top edge of the cake, if desired. Wilton 1M is my favorite tip. You can also embellish with extra biscoff/speculoos cookies between the swirls and sprinkle crushed cookies around the base of the cake. 

    For the look created in these photos I used this off-set spatula, which I lightly pressed into the frosting while I turned the turntable.  Start at the bottom of the cake, slightly moving the spatula up the cake as each turn is complete.

    ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ tips for the best biscoff cake 

    Use a scale to measure your ingredients for the best results. If you do not have a kitchen scale, see the notes in the ingredient section on how to measure the flour. I use this OXO scale in my kitchen and if your budget is tight, this Escali scale is also fantastic!

    For the perfect crumb, use room temperature ingredients and store bought buttermilk.  It gives the cookie butter cake more flavor and moisture.

    Don't over mix the cake batter. Use low speed when combining the wet and dry ingredients and mix until everything is just combined. I usually stop the mixer when all the ingredients have just come together and use a spatula to finish the mixing.

    The cake batter is thick so an off-set spatula works great to smooth it into the pans.  Once the batter is in the pan, drop the pan on the counter a couple times to remove any air bubbles.

    Don't over bake the cake. Remember your oven is different from mine and baking times may vary a little. The easy cookie butter cake is done when a toothpick inserted in the center comes out with just a few moist crumbs.

    Allow the cake to cool completely before adding the filling and frosting.

    • 6 ground biscoff/speculoos cookies (50g/yields a shy ยฝ cup)

    • 1 cup granulated sugar (200g)
    • ยฝ cup dark brown sugar packed (100g)

    • ยพ cup buttermilk room temperature* (180mL)

    • 6 biscoff or speculoos cookies crumbled (50g)
    • ยพ cup cookie butter spread (180g)

    Cookie Butter swiss meringue buttercream

    • 5 extra large egg whites or 6 large egg whites/(180-200g)
    • 1 ยผ cups granulated sugar (150g)
    • ยฝ teaspoon kosher salt
    • 1 ยฝ cups unsalted butter room temperature** (339g)
    • ยฝ cup cookie butter spread (120g)

    Instructions

    • For the cake: preheat the oven to 350ยฐF.
    • Prepare two 8-inch round baking pans; butter the pans, line the bottom of each pan with parchment paper, butter again and dust lightly with flour. Set aside.
    • Place 6 biscoff/speculoos cookies (50g) in your food processor and pulse several times to reach a flour-like consistency. This will yield a shy ยฝ cup of ground cookies. You can also use a zip-top bag and a rolling pin or meat mallet to crush the cookies, do your best to make them as fine as possible.
    • In a bowl, whisk together all-purpose flour (2 cups/250g), ground biscoff cookies (6 cookies/50g), baking powder (2 ยผ teaspoons) and kosher salt (ยฝ teaspoon). Set aside.
    • In the bowl of a stand mixer fitted with the paddle attachment, cream butter (ยพ cup/170g) and both sugars (1 cup granulated sugar/200g and ยฝ cup brown sugar/100g). Start on low until incorporated and increase to medium-high (speed 6 on KitchenAid) until light and fluffy, approximately 5 minutes. Scrape down bowl, add your eggs (2 extra large OR 3 large) and vanilla extract and mix on medium (speed 4 on KitchenAid) until well combined. If using 3 large eggs, add 2 and mix until incorporated, then add the 3rd egg and vanilla.
    • With the mixer on low (stir on KitchenAid), add the flour mixture and buttermilk (ยพ cup/180mL) in three alternating additions, beginning and ending with the dry, being careful not to over mix your batter. (I do โ…“ flour, ยฝ buttermilk, โ…“ flour, stop and scrape the bowl, ยฝ buttermilk, โ…“ flour)
    • Divide your batter equally between the two prepared pans, then lightly drop the pans on the counter a couple times to remove and air bubbles. Then bake 30-35 minutes, until tops are lightly browned and a toothpick or cake tester comes out mostly clean. Cool cake layers in pans placed on a wire rack for 10-15 minutes before turning them onto the wire rack to cool completely. Be sure to leave them topside up.

    For the buttercream:

    • Wipe the bowl and whisk of your stand mixer with vinegar or lemon juice to make sure it is grease free or your egg whites may not stiffen.
    • Whisk egg whites (5 extra large OR 6 large), granulated sugar (1 ยผ cups/250g) and kosher salt (ยฝ teaspoon) in the bowl of your stand mixer. Whisk and heat mixture over a saucepan of simmering water until hot to touch, sugar is fully dissolved (you should not feel any granules when rubbed between your fingers) and itโ€™s a bit frothy, approximately 3 minutes. (if you would like to ensure the eggs are hot enough, they should be 160ยฐF).
    • Remove the bowl from the saucepan and wipe the bottom dry. Place on your stand mixer and whisk on medium-high (speed 8 on KitchenAid) until the mixture is cool and the meringue holds a stiff peak (the bottom of your bowl should also be cooled), approximately 10 minutes.
    • Switch to the paddle attachment, reduce the speed to medium (speed 4) and add the butter, one tablespoon at a time, letting the butter fully incorporate before adding more. (1 ยฝ cups/339g total butter) *** Once all butter is incorporated, scrape down sides of the bowl and add cookie butter spread (ยฝ cup/120g) and whip on high (speed 8 or 10) until a thick, whipped consistency is reached, about 3-5 minutes.

    Assemble the cake:

    • Once the cakes are cool, level with a large serrated knife or cake leveler, if needed.
    • Place one layer on a serving plate, cake stand or a cardboard cake round, topside up. Spread cookie butter (ยพ cup/180g) evenly over the layer. Add about 1 cup of buttercream and spread evenly over the cookie butter. Then sprinkle the 6 crumbled biscoff/speculoos cookies over the buttercream and gently press into the frosting.
    • Place the second layer, topside down, on top of the filling. Lightly frost the cake to create a crumb coat. This does not have to be perfect, it is meant to lock all the crumbs into the thin layer of frosting. Chill cake for 30 minutes to set the crumb coat.
    • Frost with remaining buttercream, smoothing evenly over the top and sides of the cake. Decorate with swirls of frosting around the top edge of cake, if desired. Wilton 1M is my favorite tip. You can also embellish with extra biscoff/speculoos cookies between the swirls and sprinkle crushed cookies around the base of the cake.     Notes

    The cakes can be baked, cooled and frozen for up to two weeks ahead of time. Once they are cool, wrap each layer in a double layer of plastic wrap and freeze. I personally find assembling a decorating frozen cake layers easier.
    *The buttermilk can be substituted with kefir.
    I prefer using store-bought buttermilk, but if you find yourself without it you can make your own. Place 2-3 teaspoons of white vinegar or lemon juice in your measuring cup and add milk to equal ยพ cup, stir and let stand until room temperature (about one hour). The milk will appear curdled.
    ** Your butter only needs about 1 hour of time (depending on temperature of your kitchen) to get to room temperature. You want the butter still slightly cool to the touch and not overly warm or soft.
    *** At some point your buttercream is going to be a sloppy mess. It may even look curdled. Do not fear, just keep whipping and it will magically come together into a beautiful whipped frosting. If you feel it is too soupy, place the mixture in the refrigerator for 20 minutes and then re-whip.     If you only have salted butter, eliminate the kosher salt.
    If you only have table salt, start with half the amount of salt.
    The cake tastes best served at room temperature.
    The cookie butter cake can be stored at room temperature in an airtight container for up to 2 days. It can also be stored tightly wrapped in the refrigerator for up to 5 days. The cake can be frozen with the frosting for up to 2 months. You can either chill the cake well; then wrap the whole thing tightly in a double layer in plastic wrap. Or cut the cake into individual slices and chill; then wrap each slice tightly in a double layer of plastic wrap. Allow to defrost at room temperature before serving.

    Not going to lie, buttercream sugar cookies are my favorite.  Something about that classic vanilla, with a hint of almond flavor combo is so intoxicating.  With close to 30 variations of sugar cookies on two sugar bugs, from sugar cookie cake to sugar cookie fudge, it only seemed fitting to add a cheesecake recipe.

    You are going to love this sugar cookie cheesecake because it is rich and decadent without being overly sweet, much like my chocolate raspberry cheesecake and espresso cheesecake. This one has a sugar cookie crust with a luscious, silky New York style cheesecake flavored with vanilla and almond.  Then itโ€™s topped with a easy buttercream that gets lightly heated and poured over the top.

    Since you are busy, like me, this baked cheesecake is simple to put together. It is baked in a 9-inch springform pan and without a traditional water bath. The hardest part is letting it chill before serving!

    โฒ๏ธ how do you know when cheesecake is done baking?

    This sugar cookie cheesecake should have some jiggle in the middle when it is done baking. In my oven, this cheesecake consistently baked for 50 - 55 minutes. The edges will be set and when you lightly tap the sides of the pan, the middle will have a little wiggle to it.

    It can be a little unnerving to see the jiggly middle, but the cheesecake will continue to cook and set up as it cools. If you want to see what my baked cheesecake recipes look like when I turn off the heat in the oven, you can watch the video on my birthday cheesecake recipe.

    Cream cheese ~ use full fat blocks of cream cheese. It is important for the cream cheese to be softened to room temperature. Depending on the temperature of your kitchen this will likely take at least 2 hours. My kitchen is on the cooler side and I typically go 3-4 hours. I tested with both Philadelphia brand and Trader Joe's.

    Cornstarch ~ the cornstarch works to keep the cheesecake thick and silky.

    Sour cream ~ use full fat sour cream and allow it to come to room temperature. If the liquid separates, just stir it back together before adding it to the batter.

    Vanilla and almond extract ~ vanilla + almond = classic sugar cookie flavor.  We use both these extracts in the crust, the creamy filling and the buttercream.  Some people feel very strongly about almond extract and itโ€™s not by any means overwhelming in this sugar cookie cheesecake recipe.  If you absolutely cannot stand almond extract, you can leave it out.

    ๐Ÿฅฃ how to make the shortbread crust

    If necessary, adjust the oven racks to have room for a pan of water on the lowest rack and the cheesecake on the center rack. Then preheat the oven to 325ยฐF.

    Make the sugar cookie shortbread crust: in a medium size bowl, combine the flour, kosher salt and sugar. Then add the cold and cubed butter and work it into the flour mixture with a fork, pastry cutter or your clean fingers.

    Add the vanilla and almond extract once the butter is fully worked in. The mixture should be moist enough to clump together when you grab a handful, but also be crumbly. If needed, add up to one tablespoon of milk.

    If you want to be able to remove the cheesecake from the bottom before serving, line the pan with a piece of parchment paper.

    Press the mixture evenly into the bottom of a 9 inch springform pan with a removable bottom.

    Pre-bake the crust for 20 minutes. Remove from the oven and allow to cool slightly while you prepare the filling.

    ๐Ÿฎ how to make the vanilla filling

    Using a handheld mixer or stand mixer with the paddle attachment, beat the room temperature cream cheese and granulated sugar on medium until the mixture is smooth and creamy. Scrape the bowl.

    Add the cornstarch, sour cream, vanilla and almond extract and beat until fully combined. Scrape up and down the bowl.

    On low, add the eggs one at a time, beating until just blended. Once the final egg disappears into the batter, stop the mixer. Now use a spatula to make sure the final egg is fully combined and mixed in the batter.

    Pour the cheesecake mixture into the par-baked sugar cookie crust. Smooth the top with an offset spatula, if needed. Bake according to the directions in the recipe card.

    ๐Ÿฐ buttercream ganache

    For the ultimate sugar cookie cheesecake, we are adding some buttercream frosting. This one is a little unconventional, as I wanted it to be super easy to smooth over the top.

    The buttercream is made in a saucepan. Then lightly warmed until its a thick and pourable consistency. If you prefer, you can skip the warming and just smooth the buttercream over the top of the baked cheesecake.

    Make the buttercream ganache: in a medium size saucepan add the unsalted butter and beat with a handheld mixer on medium-high until creamy.

    Scrape the pan and add the confectioners' sugar, vanilla extract, almond extract and half and half and beat on low until combined, then increase the speed to medium-high and beat until fluffy.

    Place the saucepan over low heat and lightly warm just until a thick, glaze like consistency. {if you have a microwave you could use it instead}. Pour the buttercream over the cooled cheesecake and spread with an offset spatula.

    If desired, top with some sprinkles or use a toothpick to drop some gel food coloring onto the buttercream and swirl it into the buttercream.

    ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ tips for the best creamy cheesecake

    • Use room temperature ingredients ~ the room temperature ingredients combine more evenly and create a smooth batter {no lumpy cheesecake here!}.
    • Use full fat ingredients ~ buy the block cream cheese and not the whipped spread {they don't behave the same in baking}. This adds to the creaminess of the sugar cookie cheesecake.
    • Cornstarch ~ the addition of a little starch prevents the protein in the eggs from stiffening. This adds to the silky and creamy final texture.
    • Don't over mix the batter ~ which can add too much air and cause the cheesecake to rise and then fall during baking.
    • Place the springform pan on top of a baking pan before placing it in the oven. This will catch any leaks of butter from the shortbread crust and keep your oven cleaner!
    • Don't over bake ~ a classic cheesecake has a creamy texture. You can eat an over baked cheesecake, but it will not have the creamy and silky texture.
    • Allow to cool slowly ~ the cheesecake should cool in the oven before removing to the counter to cool.

    Ingredients

    • 1 ยผ cups all-purpose flour (156g)
    • ยผ teaspoon kosher salt
    • ยฝ cup granulated sugar (100g)
    • 1 teaspoon pure vanilla extract
    • ยผ teaspoon almond extract
    • ยฝ cup unsalted butter cold and cubed (113g)
    • 1 tablespoon milk only if needed (15mL)

    cheesecake

    • three 8 ounce blocks of full fat cream cheese room temperature (681g)
    • ยพ cup granulated sugar (150g)
    • 2 teaspoons cornstarch
    • ยพ cup full fat sour cream room temperature (180g)
    • 1 tablespoon vanilla extract
    • ยฝ teaspoon pure almond extract
    • 3 large eggs room temperature

    • ยฝ cup unsalted butter room temperature (113g)
    • 1 cup +2 tablespoons confectioners' sugar (135g)
    • 1 teaspoon pure vanilla extract
    • ยผ teaspoon almond extract
    • 2 tablespoons half and half OR whipping cream OR milk (30mL)

    Instructions

    • If necessary, adjust the oven racks to have room for a pan of water on the lowest rack and the cheesecake on the center rack. Then preheat the oven to 325ยฐF.
    • Make the sugar cookie shortbread crust: in a medium size bowl, combine the flour (1 ยผ cups/156g), kosher salt (ยผ teaspoon) and sugar (ยฝ cup/100g). Then add the cold and cubed butter (ยฝ cup/113g) and work it into the flour mixture with a fork, pastry cutter or your clean fingers. When the butter is fully worked in, add the vanilla (1 teaspoon) and almond extract (ยผ teaspoon). The mixture should be moist enough to clump together when you grab a handful, but also be crumbly.     • If you want to be able to remove the cheesecake from the bottom before serving, line the pan with a piece of parchment paper.     • Make the creamy cheesecake: Using a handheld mixer or stand mixer with the paddle attachment, beat the room temperature cream cheese (three 8 ounce blocks/681g) and granulated sugar (ยพ cup/150g) on medium (speed 6 on a KitchenAid) until the mixture is smooth and creamy, about 2 minutes. Scrape the bowl. Add the cornstarch (2 teaspoons), sour cream (ยพ cup/180g), vanilla (1 tablespoon) and almond extract (ยฝ teaspoon) and beat another minute, until fully combined. Scrape up and down the bowl. On low (speed 2), add the eggs one at a time, (3 large) beating until just blended. Once the final egg disappears into the batter, stop the mixer. Use a spatula to make sure the final egg is fully combined and mixed in the batter.
    • Pour the cheesecake mixture into the par-baked sugar cookie crust. Smooth the top with an offset spatula, if needed.
    • Prepare a large pot of boiling water and once it's boiling, pour about an inch of hot water in a 9x13 or large baking pan (do not use glass!) and place the pan of water on the bottom rack of the oven.
    • Bake the cheesecake* in the center of the oven for 50-60 minutes, or until the center is almost set. The cheesecake is done when the center will jiggle slightly if you gently tap the pan. Turn the oven off and leave the door slightly open. Let the cheesecake cool in the oven for 30-60 minutes (with the pan of hot water still in the oven as well). Move the cheesecake to the counter to cool another 1-2 hours. Then prepare the poured buttercream ganache topping.
    • Make the buttercream ganache: in a medium size saucepan add the unsalted butter (ยฝ cup/113g) and beat with a handheld mixer on medium-high until creamy. Scrape the pan and add the confectioners' sugar (1 cup + 2 tablespoons/135g), vanilla extract (1 teaspoon), almond extract (ยผ teaspoon) and half and half (2 tablespoons/30mL) and beat on low until combined, then increase the speed to medium-high and beat another 2-3 minutes, until fluffy. (if you don't have a handheld mixer, this can be done in a stand mixer and transferred to a saucepan)
    • Place the saucepan over low heat and lightly warm just until a thick, glaze like consistency**. (if you have a microwave you could use it instead). Pour the buttercream over the cooled cheesecake and spread with an offset spatula. If desired, top with some sprinkles or use a toothpick to drop some gel food coloring onto the buttercream and swirl it into the buttercream.
    • If you prefer, you can skip the warming and just smooth the buttercream over the top of the baked cheesecake.
    • Move the cheesecake to the refrigerator for at least 6 hours and ideally overnight.
    • If needed, use a knife to loosen the chilled cheesecake from the springform pan, then remove the rim. Slice and serve.

    Notes

    *If you want to keep your oven clean, place the springform pan on top of a sheet pan to catch any leaks from the butter in the sugar cookie crust. I prefer to bake the cheesecake sitting on the sheet pan as well.
    **If you over warm the buttercream and the butter splits, place the pan in the refrigerator for about one minute. Remove from the refrigerator and vigorously stir until it comes back together. If needed, return to the refrigerator for another minute and stir again.
    Store any leftover cheesecake in the refrigerator for up to 5 days, it will store better in an airtight container or with parchment pressed up against the cut sides. If you place plastic wrap over the ganache, it will get a little condensation on it.
    The cheesecake can also be frozen for up to 2 months. You can either chill the cheesecake well; then wrap the whole thing tightly in a double layer in plastic wrap. Or cut the cheesecake into individual slices and chill; then wrap each slice tightly in a double layer of plastic wrap. Allow to defrost in the refrigerator before serving.
    If you don't have a springform pan, you can line a 9-inch cake pan with parchment, leaving some overhang so you can pull the cheesecake out of the pan. The edges might look a little more rustic with this method.
    If you would like a small cheesecake; divide the ingredients by 3, which makes enough batter to make a small 6-inch cheesecake. For the cornstarch use about ยพ teaspoon. The bake time will be around 27-32 minutes.
    I haven't ever worked with cream cheese outside of the U.S., but readers have told me it comes in tubs and is thicker and more solid than the spreadable/tub cream cheese in the U.S. and should work.
