    A chewy, thick, peanut buttery pb cookie. This cookie has a little twist on the classic with the addition of some ground oatmeal. The oats add a phenomenal chew factor and also some nutritional value.

    Peanut butter is a staple at our house. We go through a 36 ounce jar of natural peanut butter every couple of months. PB and J is little e's current lunch sandwich of choice. Big E likes toast with peanut butter and cinnamon honey for breakfast. As far as Mr. Two Sugar Bugs and I, we'll take it any way we can get it! That makes these chewy, peanut buttery cookies a favorite for us.

    Here it is!  My first "sometimes savory"๐Ÿ˜Š.  I'm so excited to share this recipe with you!!  This favorite pasta carbonara is something we eat frequently at our house.  When I say frequently, I mean we eat it weekly.  It's so quick and simple to prepare and it tastes amazing!!  Comfort food at it's finest.

    My mom is a fantastic cook.  We ate a variety of foods growing up and every once in a while she would make us Pasta al Burro, a decadent, simple pasta dish.  My mom even added bacon to put it over the top.  It was incredibly rich, but so delicious!

    I hope everyone had a fantastic holiday season filled with love, laughter, great food and lots and lots of cookies and treats!

    On one hand, all the sweets and indulgent food have made my mouth very happy, but on the other hand I am just craving one big, healthy salad.  So as we roll into the new year, I want to bring you another healthier muffin.  It's time to pull out that zucchini you froze at the end of summer and make these zucchini oat bran chocolate chip muffins.

    Muffins have not always been my favorite as a breakfast choice.ย  I think it's because my experience has typically been a very sweet, cake like muffin.ย  Essentially a cupcake masquerading as something healthy.ย  As you have come to know about me, I love a good sweet treat!ย  But when it comes to breakfast, I want something hearty and healthy, something that is going to start my day on the right path.ย  Something that will fill me up, like these small batch banana muffins or cranberry zucchini bread . These zucchini oat bran chocolate chip muffins do exactly that!

    Earlier this summer, Sally, of Sally's Baking Addiction, published a recipe for blueberry oatmeal muffins that has forever changed my outlook on muffins.ย  Ever since slightly adapting her recipe to make my blueberry oat muffins, I have been obsessed with making muffins with oats.ย  So when our friend shared some of her garden grown zucchini with us this summer, I knew I wanted to make a variation on the zucchini muffin.

    These muffins are packed with oats, bran and zucchini and sweetened with just a small amount of chocolate chips.ย  When we tested the first batch, Mr. two sugar bugs stated, "I'd like them with more chocolate chips", while I felt like they were perfect with just a surprise bite of chocolate here and there.ย  The two little bugs both proclaimed them delicious and even little e, who is doing her darndest to make me crazy with food right now, gobbled them up.ย  That makes them a winner in my book!

    For the original recipe, I used โ…“ cup of semi-sweet chocolate chips.ย  If you want a sweeter muffin, you can increase the chocolate chips to ยฝ cup and you could certainly use milk chocolate chips, if that is your preference.ย  I highly recommend using your salad spinner to drain the moisture from your shredded zucchini.ย  I stumbled upon this trick when making my blueberry zucchini bread and cannot imagine using any other method to extract the moisture from zucchini, the salad spinner makes it too darn easy!

    Zucchini Chocolate Chip Oat Bran Muffins

    You are going to love these zucchini oat bran chocolate chip muffins because they are packed with a hearty oat flavor and just a hint of sweetness!
    Servings: 12 muffins

    Ingredients

    • ยฝ cup old-fashioned oats
    • 1 cup unsweetened almond milk any milk can work
    • ยฝ cup wheat bran I like Bobโ€™s Red Mill
    • 1 ยฝ cups whole-wheat flour I like King Arthur's White Whole Wheat Flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • ยฝ teaspoon salt
    • 2 cups zucchini shredded and most of the moisture squeezed out
    • โ…“ cup brown sugar
    • 2 tablespoons butter melted and slightly cooled
    • 1 teaspoon pure vanilla extract
    • 2 large eggs
    • โ…“ cup chocolate chips use ยฝ cup if you want more sweetness

    Instructions

    • Combine the oats with the milk and set aside for 20 minutes so the oats can soak up some of the moisture.* Donโ€™t go longer than 30 minutes with this step! Old-fashioned oats work best. Instant or quick oats are too small and will dissolve as the muffins cook.
    • Preheat oven to 425ยฐF and line your muffin pan with paper liners or coat with non-stick spray.
    • In a large bowl, whisk together the wheat bran, whole-wheat flour, baking powder, baking soda and salt. Set aside. In another bowl, combine the zucchini, brown sugar, cooled melted butter, vanilla extract and eggs. Pour the wet ingredients into the dry ingredients and stir a few times before adding the soaked oats and milk mixture. Gently combine, then add chocolate chips and gently mix it all together.
    • Spoon batter into muffin wells (I like to use an ice cream or cookie scoop), filling them up to the top. Bake for 5 minutes at 425ยฐF, then turn the oven down to 350ยฐF* (keeping muffins in the oven the whole time) and bake another 12-14 minutes or until a toothpick inserted in the center of the muffin comes out clean.
    • Allow muffins to cool about 5 minutes in the pan and then transfer to a wire rack to cool further. Muffins will stay fresh covered at room temperature for a couple days, then transfer to the refrigerator for up to one week. They also freeze well.

    The chocolate chip cookie is a true classic with many devoted lovers of it, yet just as many opinions on the variety of ways it can be conceived.ย  There seems to be no end on what recipe style is best ~ soft, thick, thin, chewy, crunchy or crispy.

    Some prefer them with nuts, like my pistachio chocolate chip cookies.ย  Maybe you like them as big bakery cookies with biscoff. Or maybe mom made them like small lumps.ย Whatever your choice, it's hard to find someone who is not a chocolate chip cookie fan. Did you know you can also make chocolate chip cookies without brown sugar?

    I'm pretty sure chocolate chip cookies were the first thing I really learned how to bake. The cookies I made in my early years were nothing like the beauties I am happy to share with you today.

    The recipe I am sharing is a variation on a highly guarded family recipe.ย After much time and effort, I perfected the family recipe into my perfect chocolate chipper recipe.ย  I can guarantee that my sister would stop speaking to me if I actually shared the original recipe.๐Ÿ™

    These are my family's favorite chocolate chip cookies.ย Otherwise known as chocolate chippers.

    The truth of the matter is that I have been tinkering with and putting my own spin on this recipe for years now.ย One ingredient from the family recipe has become almost impossible to find so I had to figure out a way to still create amazing and delicious chocolate chip cookies without it.

    This chocolate chip recipe starts with your usual suspects: room temperature butter, granulated sugar and brown sugar.ย  You cream them together until they get light, fluffy and happily united. I use my Kitchen Aid mixer; she's a workhorse and has been going strong for 20+ years now!

    Now that you've gotten your butter and sugars all fluffy, you'll add your eggs and vanilla.ย Then add your flour, baking soda, salt and cornstarch.ย One of the things I have tinkered with in this recipe is the flour. For a short time I was using a combination of all-purpose flour and cake flour to get a softer and chewier cookie, but not everyone keeps cake flour in their pantry.ย I needed something easier. I have found adding cornstarch to the all-purpose flour is an easy way to get the same soft and chewy chocolate chip cookie. Finally you add your chocolate chips and then give the dough a little time to chill in the refrigerator - approximately 1 hour.

    These chocolate chippers are slightly thick with a soft and chewy center and barely crisp edges.ย A perfect cookie, if you ask me.ย The ratio of brown sugar to granulated sugar is 2:1 and using dark brown sugar adds an incredible depth of flavor.ย You can use whatever type of chocolate chips you like, but I highly suggest using two different types of chocolate.ย My favorite is half semi-sweet chocolate chips and half milk chocolate and peanut butter chips. Semi-sweet and milk chocolate or semi-sweet and M&M's are two other combinations that I frequently use.

    Honestly, I always have a batch of these chocolate chippers in my freezer.ย  I bake them and cool them, then layer them in an airtight container and tuck them away.ย You can let them thaw on the counter for 5-10 minutes or just eat them ice cold.ย I like to let mine warm to room temperature, but everyone else in my family is a bit impatient and can't wait that long, so they eat them straight from the freezer.

    This recipe can also be prepared up to the point of portioning your dough (I use a cookie scoop) and then freezing the dough balls.ย If doing this, I recommend portioning your dough and chilling it for about an hour in the refrigerator before placing the cold and solid dough balls into a zip top plastic bag for the freezer.ย  Alternately, you can place the cold and solid dough balls in an airtight container.ย Just pull the dough out of the freezer as you preheat the oven - I check them at the same time interval, but they may end up needing a minute or two more to bake.

    Your chocolate chippers will bake the best on a silicone baking mat or parchment paper. I use a cookie scoop to create the cookie dough balls.ย They'll look very soft and slightly underdone when you pull them out of the oven.ย You'll let them rest on the baking pan for 5 minutes before moving to a cooling rack to cool completely.

    I have tested this recipe multiple times and my mom and dad say they can't taste a difference between my recipe and the secret family recipe. Mr. two sugar bugs reported recently that he actually prefers this newer version. In any case, if you are looking for a chocolate chip cookie recipe that everyone is going to ask you for ~ this is it!

    Ingredients

    • 2 ยฝ cups all-purpose flour (313g)
    • 1 teaspoon baking soda
    • 2 teaspoons cornstarch
    • 1 teaspoon kosher salt
    • ยพ cup unsalted butter (170g) room temperature
    • 1 cup dark brown sugar (200g) firmly packed (I prefer dark brown, but light brown works too)
    • ยฝ cup granulated sugar (100g)
    • 2 large eggs
    • 1 ยฝ teaspoons pure vanilla extract
    • 6 ounces semi-sweet chocolate chips*
    • 6 ounces milk chocolate chips*

    Instructions

    • In a medium size bowl, whisk flour (2 ยฝ cups/313g), baking soda (1 teaspoon), cornstarch (2 teaspoons) and kosher salt (1 teaspoon). Set aside.
    • Cream butter (ยพ cup/170g) and both sugars (1 cup dark brown sugar/200g and ยฝ cup granulated sugar/100g) on medium high with a stand mixer fitted with the paddle attachment, or a hand mixer, until light and fluffy. Approximately 3-5 minutes.
    • Scrape down your bowl and add the eggs (2 large) and vanilla (1 ยฝ teaspoons). Mix until well combined.
    • With the mixer on low, add the flour mixture and blend until just combined.
    • Fold in the chocolate chips (6 ounces semi-sweet/6 ounces milk chocolate).
    • Cover and chill at least one hour and up to 2 days.
    • Preheat oven to 350ยฐF
    • Prepare baking sheets with a silpat liner or parchment paper.
    • Using a cookie scoop (approximately 2 tablespoons of dough), place cookie dough on prepared baking sheet, spacing about 2 inches apart.
    • Bake 11-14 minutes, until edges are lightly browned. They will look slightly underdone in the centers. Allow to cool on the pan for 5 minutes and then transfer to a cooling rack to cool completely.

    Notes

    *You can use any combination of chocolate chips.ย  I also like to do semi-sweet mixed with milk chocolate and peanut butter chips or semi-sweet mixed with m&m's.

    Everyone needs a great American Buttercream recipe in his or her kitchen.ย  If you look around on the internet (i.e. Pinterest in my case) ๐Ÿ˜‰ there are hundreds of variations out there, most of which claim to be the BEST.ย  I have played around with many of these recipes and this ratio of ingredients has come to be the one my family and friends call their favorite.ย  I use both pure vanilla extract and almond extract.ย  If you are not fond of almond, just use all vanilla.ย  They interchange beautifully.ย  Personally, I love almond and I think it helps to make this buttercream perfect!
