    If you've followed me for any length of time on Instagram, you know I am a huge fan of oatmeal. Chewy plump oatmeal peanut butter chocolate chip cookies are a cookie that you absolutely want in your cookie rotation! They are unashamedly thick and fat and bursting with oats and peanut butter.

    My friend, Betty, gave these cookies the ultimate compliment. She baked up a test batch for me. The next time I saw her she told me they were so good that she "hid them all in the back of her freezer so she wouldn't have to share them with anyone". A girl after my own heart! โค๏ธ

    ๐Ÿช MAKING YOUR OATMEAL PEANUT BUTTER CHOCOLATE CHIP COOKIES

    This recipe comes together quickly and only takes a short 45 minutes to an hour of chill time. These oatmeal peanut butter chocolate chip cookies bake up so thick and chewy and are sure to satisfy all the cookie monsters in your life.

    I use a #30 cookie scoop to get about 2 tablespoons of cookie dough per cookie. These cookies are definitely large so you'll want to give plenty of room between them on the baking sheet.

    They will likely be a little puffy when you pull them out of the oven. I lightly press on the tops (with the palm of my hand) once removed from the oven to give them a less domed appearance.

    Chewy and Plump Oatmeal Peanut Butter Chocolate Chip Cookies

    Ingredients

    • ยพ cup all-purpose flour (94g)
    • ยฝ teaspoon baking powder
    • ยฝ teaspoon baking soda
    • ยฝ teaspoon kosher salt
    • ยฝ cup unsalted butter room temperature (113g)
    • ยฝ cup brown sugar firmly packed (I prefer dark brown, but light brown works too) (100g)
    • ยฝ cup granulated sugar (100g)
    • ยฝ cup creamy peanut butter (120g)
    • ยฝ teaspoon pure vanilla extract
    • 1 large egg
    • 2 cups old-fashioned rolled oats (160g)
    • 1 cup chocolate chips (180g)

    Instructions

    • In a medium size bowl, whisk flour (ยพ cup/94g), baking powder (ยฝ teaspoon), baking soda (โ…“ teaspoon) and kosher salt (ยฝ teaspoon). Set aside.
    • Cream butter (ยฝ cup/113g) and both sugars (ยฝ cup granulated/100g) and ยฝ cup packed brown sugar (100g) on medium high with a stand mixer fitted with the paddle attachment, or a hand mixer, until combined. Add peanut butter (ยฝ cup/120g) and continue until light and fluffy. Approximately 3-5 minutes.
    • Scrape down your bowl and add vanilla (ยฝ teaspoon) and the egg (1 large). Mix until well combined.
    • With the mixer on low, add the flour mixture and blend until just combined.
    • Fold in oats (2 cups/160g) and chocolate chips (1 cup/180g).
    • Chill 45 minutes to one hour.
    • Preheat oven to 350ยฐF.
    • Prepare baking sheets with a silicone baking mat or parchment paper.
    • Using a cookie scoop (approximately 2 tablespoons of dough), place cookie dough on prepared baking sheet, spacing about 2 inches apart.
    • Bake 12-15 minutes, until edges are lightly browned. They will be a little puffy, I lightly press down on the tops once removed from the oven to give them a less domed appearance.
    • Allow to cool on the pan for 5 minutes and then transfer to a cooling rack to cool completely.

    Notes

    Cookies stay fresh in an airtight container for up to one week.ย  Baked cookies freeze well for up to three months.
    I do not recommend using natural peanut butter for these cookies.ย  A brand like Jif or Skippy works best.

    Peanut butter is a staple at our house. We go through a 36 ounce jar of natural peanut butter every couple of months. PB and J is little e's current lunch sandwich of choice. Big E likes toast with peanut butter and cinnamon honey for breakfast. As far as Mr. Two Sugar Bugs and I, we'll take it any way we can get it!     Here it is!  My first "sometimes savory"๐Ÿ˜Š.  I'm so excited to share this recipe with you!!  This favorite pasta carbonara is something we eat frequently at our house.  When I say frequently, I mean we eat it weekly.  It's so quick and simple to prepare and it tastes amazing!!  Comfort food at it's finest.

    My mom is a fantastic cook.  We ate a variety of foods growing up and every once in a while she would make us Pasta al Burro, a decadent, simple pasta dish.  My mom even added bacon to put it over the top.  It was incredibly rich, but so delicious!

    I hope everyone had a fantastic holiday season filled with love, laughter, great food and lots and lots of cookies and treats!

    On one hand, all the sweets and indulgent food have made my mouth very happy, but on the other hand I am just craving one big, healthy salad.  So as we roll into the new year, I want to bring you another healthier muffin.  It's time to pull out that zucchini you froze at the end of summer and make these zucchini oat bran chocolate chip muffins.

    Muffins have not always been my favorite as a breakfast choice.ย  I think it's because my experience has typically been a very sweet, cake like muffin.ย  Essentially a cupcake masquerading as something healthy.ย  As you have come to know about me, I love a good sweet treat!ย  But when it comes to breakfast, I want something hearty and healthy, something that is going to start my day on the right path.ย  Something that will fill me up, like these small batch banana muffins or cranberry zucchini bread . These zucchini oat bran chocolate chip muffins do exactly that!

    Earlier this summer, Sally, of Sally's Baking Addiction, published a recipe for blueberry oatmeal muffins that has forever changed my outlook on muffins.ย  Ever since slightly adapting her recipe to make my blueberry oat muffins, I have been obsessed with making muffins with oats.ย  So when our friend shared some of her garden grown zucchini with us this summer, I knew I wanted to make a variation on the zucchini muffin.

    These muffins are packed with oats, bran and zucchini and sweetened with just a small amount of chocolate chips.ย  When we tested the first batch, Mr. two sugar bugs stated, "I'd like them with more chocolate chips", while I felt like they were perfect with just a surprise bite of chocolate here and there.ย  The two little bugs both proclaimed them delicious and even little e, who is doing her darndest to make me crazy with food right now, gobbled them up.ย  That makes them a winner in my book!

    For the original recipe, I used โ…“ cup of semi-sweet chocolate chips.ย  If you want a sweeter muffin, you can increase the chocolate chips to ยฝ cup and you could certainly use milk chocolate chips, if that is your preference.ย  I highly recommend using your salad spinner to drain the moisture from your shredded zucchini.ย  I stumbled upon this trick when making my blueberry zucchini bread and cannot imagine using any other method to extract the moisture from zucchini, the salad spinner makes it too darn easy!

    Zucchini Chocolate Chip Oat Bran Muffins

    You are going to love these zucchini oat bran chocolate chip muffins because they are packed with a hearty oat flavor and just a hint of sweetness!
    Servings: 12 muffins

    Ingredients

    • ยฝ cup old-fashioned oats
    • 1 cup unsweetened almond milk any milk can work
    • ยฝ cup wheat bran I like Bobโ€™s Red Mill
    • 1 ยฝ cups whole-wheat flour I like King Arthur's White Whole Wheat Flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • ยฝ teaspoon salt
    • 2 cups zucchini shredded and most of the moisture squeezed out
    • โ…“ cup brown sugar
    • 2 tablespoons butter melted and slightly cooled
    • 1 teaspoon pure vanilla extract
    • 2 large eggs
    • โ…“ cup chocolate chips use ยฝ cup if you want more sweetness

    Instructions

    • Combine the oats with the milk and set aside for 20 minutes so the oats can soak up some of the moisture.* Donโ€™t go longer than 30 minutes with this step! Old-fashioned oats work best. Instant or quick oats are too small and will dissolve as the muffins cook.
    • Preheat oven to 425ยฐF and line your muffin pan with paper liners or coat with non-stick spray.
    • In a large bowl, whisk together the wheat bran, whole-wheat flour, baking powder, baking soda and salt. Set aside. In another bowl, combine the zucchini, brown sugar, cooled melted butter, vanilla extract and eggs. Pour the wet ingredients into the dry ingredients and stir a few times before adding the soaked oats and milk mixture. Gently combine, then add chocolate chips and gently mix it all together.
    • Spoon batter into muffin wells (I like to use an ice cream or cookie scoop), filling them up to the top. Bake for 5 minutes at 425ยฐF, then turn the oven down to 350ยฐF* (keeping muffins in the oven the whole time) and bake another 12-14 minutes or until a toothpick inserted in the center of the muffin comes out clean.
    • Allow muffins to cool about 5 minutes in the pan and then transfer to a wire rack to cool further. Muffins will stay fresh covered at room temperature for a couple days, then transfer to the refrigerator for up to one week. They also freeze well.
