    Healthy Breakfast Cookies

    You know me, I love a good sweet treat, but I also love to start my day on the right path. These healthy breakfast cookies are wholesome, naturally sweetened and are an easy make-ahead breakfast. Make sure to use certified gluten free oats if you are gluten intolerant.

    You can customize breakfast cookies to make them your favorite flavors. At our house we like coconut and dark chocolate chips or coconut and dried blueberries. Dried cherries, raisins and pumpkin seeds are other great options.

    The cookies are perfectly portable and packable; think lunch boxes and gym bags. And while perfect for breakfast, they are also a wonderful healthy snack.

    WHAT MAKES THESE COOKIES HEALTHY?

    Banana, natural peanut butter, and old fashioned oats are the key ingredients in these cookies. The banana and oats are both rich in fiber, which helps to promote fullness. The peanut butter also adds fiber and protein. The cookies are then sweetened with the banana and just a tablespoon of honey.

    A little cinnamon for flavor and an egg and a tablespoon of coconut oil provide the binders needed to keep the cookies from falling apart.

    WHAT MAKES THESE COOKIES EASY?

    First off, everything gets mixed in one bowl. Less dishes instead of more dishes is always a win for me!

    Secondly, there is no chilling of the dough required. You mix together the wet ingredients, add in the dry ingredients and bake the cookies. Easy peasy!

    You can store healthy breakfast cookies at room temperature for a few days and they can be frozen for up to three months. I take the cookies straight from the freezer (because I can never remember to thaw them in the refrigerator the night before!) and warm them (I use our Breville toaster oven) for about 5 minutes prior to eating.

    HOW TO MAKE BREAKFAST COOKIES

    Start by preheating your oven and preparing a baking sheet pan. Next, mash your banana in a medium size bowl. You do not have to have an overly ripe banana, just be sure to mash it well. Once the banana is mashed, add the remaining wet ingredients and mix well. Finally, add the oats, cinnamon, baking powder and salt and mix it all together.

    Now comes the fun part, the add ins. Mix and match your favorites to make the breakfast cookies to your liking. Just remember that the add in ingredients may change how healthy the cookies end up being. ๐Ÿ˜‰ You need a half cup total, so feel free to use whatever you like best. Dried fruits, coconut, nuts and chocolate chips are all popular choices in our house.

    Finally, using a ยผ cup measure, scoop the batter onto the prepared baking sheet. The cookies don't spread much so I usually use the bottom of the measuring cup to lightly flatten the cookies before baking. Allow the breakfast cookies to cool on the baking sheet and then enjoy!

    Ingredients

    • 1 large ripe banana mashed
    • ยผ cup natural peanut butter smooth or crunchy
    • 1 tablespoon honey I prefer using local honey
    • 1 tablespoon coconut oil
    • ยฝ teaspoon pure vanilla extract
    • 1 large egg
    • 1 ยผ cup old fashioned oats
    • ยฝ teaspoon baking powder
    • ยผ teaspoon cinnamon
    • ยผ teaspoon kosher salt
    • ยฝ cup add-ins such as coconut, chocolate chips, dried fruit

    Instructions

    • Preheat oven to 350ยฐF. Prepare a baking sheet with a silicone baking mat or parchment paper and set aside.
    • In a medium bowl, mash the banana. Then add the peanut butter, honey, coconut oil, vanilla and egg and mix until fully incorporated.
    • Add the oats, baking powder, cinnamon and salt and mix until combined. Then fold in your add-ins. I typically use two add-ins, ยผ cup of each.
    • Using a ยผ cup, scoop batter onto baking sheet, placing cookies about 2 inches apart.
    • Bake for approximately 15 minutes, until cookies are lightly browned at the edges and are set. Allow cookies to cool on the baking sheet.

    Notes

    Cookies will store covered at room temperature for a couple of days and freeze well for up to three months.

    If you've followed me for any length of time on Instagram, you know I am a huge fan of oatmeal. Chewy plump oatmeal peanut butter chocolate chip cookies are a cookie that you absolutely want in your cookie rotation! They are unashamedly thick and fat and bursting with oats and peanut butter.

    My friend, Betty, gave these cookies the ultimate compliment. She baked up a test batch for me. The next time I saw her she told me they were so good that she "hid them all in the back of her freezer so she wouldn't have to share them with anyone". A girl after my own heart! โค๏ธ

    ๐Ÿช MAKING YOUR OATMEAL PEANUT BUTTER CHOCOLATE CHIP COOKIES

    This recipe comes together quickly and only takes a short 45 minutes to an hour of chill time. These oatmeal peanut butter chocolate chip cookies bake up so thick and chewy and are sure to satisfy all the cookie monsters in your life.

    I use a #30 cookie scoop to get about 2 tablespoons of cookie dough per cookie. These cookies are definitely large so you'll want to give plenty of room between them on the baking sheet.

    They will likely be a little puffy when you pull them out of the oven. I lightly press on the tops (with the palm of my hand) once removed from the oven to give them a less domed appearance.

    Chewy and Plump Oatmeal Peanut Butter Chocolate Chip Cookies

    These cookies are undeniably plump and loaded with oats, peanut butter and chocolate chips.  I dare you to eat just one.

    Ingredients

    • ยพ cup all-purpose flour (94g)
    • ยฝ teaspoon baking powder
    • ยฝ teaspoon baking soda
    • ยฝ teaspoon kosher salt
    • ยฝ cup unsalted butter room temperature (113g)
    • ยฝ cup brown sugar firmly packed (I prefer dark brown, but light brown works too) (100g)
    • ยฝ cup granulated sugar (100g)
    • ยฝ cup creamy peanut butter (120g)
    • ยฝ teaspoon pure vanilla extract
    • 1 large egg
    • 2 cups old-fashioned rolled oats (160g)
    • 1 cup chocolate chips (180g)

    Instructions

    • In a medium size bowl, whisk flour (ยพ cup/94g), baking powder (ยฝ teaspoon), baking soda (โ…“ teaspoon) and kosher salt (ยฝ teaspoon). Set aside.
    • Cream butter (ยฝ cup/113g) and both sugars (ยฝ cup granulated/100g) and ยฝ cup packed brown sugar (100g) on medium high with a stand mixer fitted with the paddle attachment, or a hand mixer, until combined. Add peanut butter (ยฝ cup/120g) and continue until light and fluffy. Approximately 3-5 minutes.
    • Scrape down your bowl and add vanilla (ยฝ teaspoon) and the egg (1 large). Mix until well combined.
    • With the mixer on low, add the flour mixture and blend until just combined.
    • Fold in oats (2 cups/160g) and chocolate chips (1 cup/180g).
    • Chill 45 minutes to one hour.
    • Preheat oven to 350ยฐF.
    • Prepare baking sheets with a silicone baking mat or parchment paper.
    • Using a cookie scoop (approximately 2 tablespoons of dough), place cookie dough on prepared baking sheet, spacing about 2 inches apart.
    • Bake 12-15 minutes, until edges are lightly browned. They will be a little puffy, I lightly press down on the tops once removed from the oven to give them a less domed appearance.
    • Allow to cool on the pan for 5 minutes and then transfer to a cooling rack to cool completely.

    Notes

    Cookies stay fresh in an airtight container for up to one week.ย  Baked cookies freeze well for up to three months.
    I do not recommend using natural peanut butter for these cookies.ย  A brand like Jif or Skippy works best.
