If you have followed two sugar bugs for a while you know I already have cookie butter recipes for cake, cookies, cupcakes, frosting and many more! And now I'm adding a candy bark made with white chocolate, pretzels and toffee. The extra bonus is that it's a super easy recipe too.
what's in cookie butter white chocolate bark?
Four ingredients stand between you and this candy bark ~
Cookie butter ~ cookie butter has a consistency like peanut butter, but is nut free. Made with ground up speculoos cookies, which are a spiced cookie that originated in Europe. The subtle gingerbread flavor with hints of cinnamon, nutmeg and clove pair nicely with the white chocolate.
White chocolate ~ white chocolate is a large component of this candy bark. Buy the best quality that you can afford, it will make a difference in the end result.
Pretzels ~ the crunch and saltiness of the pretzels add a nice contrast to the sweetness of the white chocolate and cookie butter.
Toffee ~ you can easily buy toffee bits to use in this recipe, but I went with a homemade version. My friend, Kim, at kickassbaker, has a daughter with peanut and tree nut allergies. I learned from Kim that many commercial toffees are not nut-free, so if you would like to make this cookie butter white chocolate bark for your nut-free friends, be sure to make your own.
Let's make cookie butter white chocolate bark!
Start by melting your white chocolate. I use the double boiler method as I don't have a microwave {I know it's weird, but I like it that way!}. If you have a microwave and are comfortable using it for melting chocolate, go ahead and use your method!
Divide the white chocolate; a small portion is melted together with the cookie butter.
Pour and spread the melted plain white chocolate on a baking pan lined with parchment {an off-set spatula works really well here}. I love this USA quarter sheet pan and use it almost daily in my kitchen!
Spoon or pour the cookie butter white chocolate on top of the plain white chocolate and then swirl it into the white chocolate with a knife.
Sprinkle the top evenly with the pretzels and toffee pieces, lightly pressing them into the melted white chocolate.
Allow the bark to set up. It takes about 2 hours at room temperature, but can be sped up by placing the bark into the refrigerator. Once the bark is set, cut into the desired sizes and enjoy!

The homemade toffee takes about 15 minutes to prepare and about 30 minutes to set up. I use the homemade toffee in my almond flour skillet cookie recipe, if you want to see some photos on how to make it.

Store in an airtight container at room temperature or in the refrigerator for up to 2 weeks.

Cookie Butter White Chocolate Bark
Cookie butter and white chocolate are melted together and topped with toffee and pretzels. Once set, it's a delicious candy treat like you'd find in a gourmet shop!
Ingredients
Toffee
- ¼ cup unsalted butter (57g)
- ¼ cup granulated sugar (50g)
- ⅛ teaspoon kosher salt
- 1 teaspoon pure vanilla extract
Cookie Butter White Chocolate Bark
- 16 ounces quality white chocolate, chopped and divided (452g)
- ¼ cup cookie butter spread (60g)
- ¾ cup pretzels, broken in pieces (35g)
Instructions
- For the toffee*: Prepare a baking sheet with a silicone baking mat or parchment paper and set aside. Add the butter, sugar, vanilla and salt to a medium heavy bottomed sauce pan. Bring to a boil over medium heat while stirring constantly with a wooden spoon until mixture just starts to turn light brown in color. The mixture will start out quite light in color and more runny in texture. It will darken and get thicker as it cooks, it takes about 6-7 minutes. Turn off the heat and keep stirring in the pan for another 1-2 minutes. Pour onto the prepared sheet pan. Allow to cool at room temperature for about 30 minutes. Once cool break up into small pieces with your hands or by using the back of a spoon. Place pieces in a jar, bowl, or ziplock bag until ready to use.
- For the bark: Line a 9x13 baking sheet or pan with parchment paper and set aside.
Melt 10 ounces of the white chocolate over a double boiler or according to the manufacturer’s instructions. Once melted, remove from the heat and add in the remaining 2 ounces of chopped chocolate and stir until smooth. - In a separate bowl, melt the remaining 4 ounces of white chocolate with the cookie butter and stir until smooth.
- Spread the plain white chocolate onto the prepared baking pan and smooth it into an even layer with an off-set spatula. Spoon or pour the cookie butter white chocolate on top and then swirl the cookie butter into the white chocolate with a knife. Sprinkle the top evenly with the pretzels and toffee pieces, lightly pressing them into the melted white chocolate.
- Allow to set at room temperature until firm, about 2 hours or place in the refrigerator for about 30 minutes. Cut or break the bark into the desired sizes and serve.
Notes
*You may not use all of the homemade toffee and can certainly use store bought toffee bits instead, start with about ½ cup.
Store in an airtight container at room temperature or in the refrigerator for up to 2 weeks.

This looks amazing! Question: doesn’t the white chocolate need to be tempered after melting as I see you were using Callebaut?

Thank you Kathy! If you notice in the directions for melting the white chocolate, I have you save aside some of the chopped chocolate. After the chocolate has melted, take it off the heat and add in the reserved chopped chocolate, stirring until smooth. This helps to lower the temperature of the melted chocolate and essentially tempers it!
