This past summer my friend, Anita, at Wild Thistle Kitchen, reminded me of this classic cookie and I immediately knew I wanted to make a cookie butter and white chocolate version! And when I thought about cookie butter, my mind instantly wandered to gingerbread.

Cookie butter has a consistency like peanut butter, but is nut free. It's made with ground up speculoos cookies, which are a spiced cookie that originated in Europe. It has notes of the spices in gingerbread, which makes it perfect for this recipe! Because cookie butter is nut free, it makes these cookies a nice alternative for those who have nut allergies.

Classic no bake cookies use cocoa powder, peanut butter, milk, butter, vanilla and oats and cook up quickly on the stovetop. This gingerbread version ditches the cocoa powder for chopped white chocolate and the peanut butter for cookie butter. The addition of a few spices spin this classic no bake cookie into a gingerbread treat perfect for fall, winter and the holiday season!

- Pure vanilla extract
- Cookie butter spread
- Milk
how to make no bake cookies
Start by measuring all your ingredients and preparing a baking sheet with parchment paper, wax paper or a silicone baking mat. This easy recipe comes together quickly so you want to be prepared.
First, whisk together the oats, ginger, cinnamon, cloves and salt and set aside. Next, measure the cookie butter and vanilla and set them aside.
Then combine the butter, both sugars, white chocolate and milk in a medium saucepan and bring to a boil over medium heat.
Once the mixture is boiling, remove the saucepan from the heat and stir in the cookie butter and vanilla. Then add the oats and stir to combine.
Next, scoop portions of dough onto the prepared baking pan. I used a #70 scoop for the cookies in these photos, which is just shy of a tablespoon. I have also used a #30 scoop, which yields just a little more than two tablespoons. This recipe is forgiving and works with big or small cookies, so go with what feels right for you.
You can flatten the cookies to look more like a traditional cookie or you can leave them in scoops. Allow the cookies to cool and set up and then move to an airtight container to store.

No Bake Gingerbread Cookie Butter Cookies
A twist on classic no bake cookies. This nut-free recipe is easy and made with white chocolate, cookie butter, spices and oatmeal.
Ingredients
- 1 ½ cups old-fashioned oats (141g)
- 1 ½ cups quick oats (141g)
- 1 ½ teaspoons ground ginger
- 2 teaspoons ground cinnamon
- ½ teaspoon ground cloves
- ¼ teaspoon kosher salt
- ¾ cup cookie butter spread (180g)
- 1 teaspoon pure vanilla extract
- ½ cup unsalted butter, cut in pieces (113g)
- ½ cup granulated sugar (100g)
- ½ cup brown sugar (100g)
- ½ cup white chocolate, chopped (70g) approximately 3 ounces
- ½ cup milk (125mL)
Instructions
- Prepare a cookie sheet with parchment, wax paper or a silicone baking mat and set aside.
- In a medium bowl, mix both oats, ginger, cinnamon, cloves and salt. Set aside.
- Measure cookie butter spread and vanilla and set aside.
- Add the butter, both sugars, chopped chocolate and milk to a saucepan and bring to a boil over medium heat, stirring frequently. Once the mixture is boiling, remove from the heat and stir in the cookie butter spread and vanilla.
- Then add the oat and spice mixture and mix thoroughly.
- Use a cookie scoop to drop scoops of dough onto the prepared cookie sheet. (I’ve used a #70 scoop, about a tablespoon and a #30 scoop, about 2 tablespoons). Allow to cool and set at room temperature, about 30-45 minutes. They can be placed in the refrigerator to set up faster.
Notes
Can be made with all old-fashioned oats or all quick oats, but I really love the combination of the two kinds of oats.
Store in an airtight container at room temperature for 2-3 days. If stored in the refrigerator they can last up to one week. Cookies can also be frozen for up to three months.
