This snacking cake recipe uses the normal suspects ~ all-purpose flour, brown sugar, unsalted butter, baking powder, kosher salt, an egg yolk, vanilla and milk.
Instead of a frosting or glaze, this cake gets topped with semi-sweet chocolate chips, coconut and chopped almonds. Here's where you can be creative or swap in what you have on hand. Only have milk chocolate chips? Use them! Don't like coconut? Use extra nuts. Prefer peanuts or pistachios?? You do you, this cake will adapt.

Start by preheating the oven and lining an 8x8 baking pan with parchment paper. I really love the USA Brand pans {not sponsored, just a big fan}.
Then combine the flour, brown sugar and unsalted butter in a bowl. Use a pastry cutter or fork to combine the ingredients until it looks like coarse meal. Next, reserve a half cup of the mixture and then add the kosher salt and baking powder. Mix to combine.
Add the egg yolk and vanilla to the measuring cup of milk and give it a whisk. Then add the milk mixture to the dry ingredients and stir it all together. The batter is on the runny side.
Next, pour the snack cake batter into the prepared pan and sprinkle the remaining dry ingredients over the top of the batter. Then spread your chocolate chips, coconut and almonds over the top.
Bake the cake for about 30 minutes or until the edges are slightly darkened and a cake tester comes out clean. Allow the cake to cool in the pan on a wire cooling rack.

This simple cake is soft and super moist! Once the cake is cool, use a sharp knife to cut the cake into the desired size slices. Wipe the knife clean between cuts. If you chill the cake for about 30 minutes prior to slicing, it will slice even easier.

Brown Sugar Snack Cake Bars
These brown sugar snack cake bars are so moist and easy to prepare! The simple recipe is mixed together in one bowl, baked in an 8x8 pan and topped with chocolate chips, coconut and almonds.
Ingredients
- 1 cup brown sugar (200g)
- 1 cup all-purpose flour (125g)
- ¼ cup unsalted butter, room temperature and cut in pieces (57g)
- ½ teaspoon baking powder
- ¼ teaspoon kosher salt
- ½ cup milk (120mL)
- 1 teaspoon pure vanilla extract
- 1 large egg yolk
- ½ cup semi sweet chocolate chips, (90g)
- ¼ cup almonds, chopped (30g)
- ¼ cup shredded coconut, packed (30g)
Instructions
- Preheat oven to 350°F and line an 8x8 baking pan with parchment paper and set aside.
- In a medium bowl, mix brown sugar and flour and cut in butter with a pastry cutter or fork until it looks like coarse meal. Remove a ½ cup of the mixture (70g) and set aside. Mix in the baking powder and kosher salt.
- Add the vanilla and egg yolk to the milk and whisk to combine. Then pour the milk mixture into the dry ingredients and mix until combined. The mixture will be on the runny side and not thick. Pour the mixture into the prepared baking pan and smooth with a spatula if necessary. Sprinkle the reserved flour and brown sugar mixture over the top of the batter. Then sprinkle the chocolate chips, almonds and coconut over the top.
- Bake for about 30 minutes or until a tester in the middle of the cake comes out clean.
- Allow to cool completely on a wire rack before cutting into desired size slices.
Notes
Can be stored covered at room temperature for up to five days or in the refrigerator for up to one week.

I made these, but forgot about the crumbs on top until after I topped with the chocolate chips and coconut, only used these two items -- so put the crumbs on last. Tasted great, but might have been less messy if did the correct order.
