    These everything croissants are made with puff pastry for an easy savory breakfast at home.  They have a soft middle with cream cheese and everything bagel seasoning and a crispy exterior.  10 minutes to prep and 25 minutes to bake.  So stay home and enjoy this bakery style pastry made in your own kitchen!

    Now are they exactly the same as traditional croissants? No, they are not. Are they just as yummy? Yes, they absolutely are!

    These puff pastry everything croissants are flaky, buttery and packed with savory flavor! Stuffed and topped with classic everything bagel seasoning, they bake up golden and crisp. They are fantastic for breakfast, brunch, or as a quick snack (much like my cornbread donuts)! This simple recipe delivers bakery style croissants with minimal effort.

    📚 the inspiration behind this recipe

    Several years ago my family and I spent a week on Whidbey Island (this is where I grew up). The Little Red Hen Bakery is one of my favorite places to buy fresh bread. I often will make a trip before Thanksgiving to buy their rosemary bread for my homemade stuffing.

    They used to have a small store front coffee shop and bakery. While I was standing in line, I heard the local gal in front of me ask if they had everything croissants that day. My brain was instantly intrigued and I have been imagining this recipe ever since!

    As with all my recipes, I tested these puff pastry croissants a few times. I learned a hot oven and not over stuffing the croissants was key! The recipe as written is for six mini croissants. If you want larger croissants, make your triangles bigger. It easily doubles to give you 6-12 pastries.

    • Puff Pastry ~ I tested this recipe with frozen puff pastry from Trader Joe's. The pastry should be defrosted before using, so you will need to plan ahead. I did not test this with a refrigerated puff pastry, but suspect that should work too.
    • Cream cheese ~ block cream cheese is used. It can be cold from the refrigerator.
    • Everything bagel seasoning ~ I use the ever popular Trader Joe's Everything but the Bagel blend. I also include a make-it-yourself version in the recipe card.

    🥣 how to make mini croissants

    Preheat the oven to 425°F and line a baking sheet pan with parchment paper.

    Place the cream cheese in a bowl, add 1 ½ teaspoons everything bagel seasoning and stir to combine.

    Spread a thin layer of the everything cream cheese over the puff pastry. An off-set spatula works well.

    Cut the puff pastry into six triangles.

    I find it helpful to cut three rectangles first, then slice each rectangle into two triangles. See the video if you need a tutorial.

    🌀 how to roll

    Starting at the long end of the triangle, gently roll each triangle into a croissant shape.

    Place the croissants on the prepared baking pan, leaving a little space between each pastry.

    Brush each croissant with the egg wash. Then sprinkle with the remaining everything seasoning.

    Bake in the preheated oven for 20-25 minutes, until puffed and golden brown.

    🫙how to store and reheat

    Everything croissants are best eaten within 30 minutes of baking. They also taste delicious at room temperature.

    Store any leftovers in an airtight container in the refrigerator. The croissants can be warmed in the oven or an air fryer. I use my Breville counter oven set at 350°F for five minutes.

    Puff Pastry Everything Croissants

    Everything croissants made with puff pastry. Creamy center with cream cheese & bagel seasoning and a crisp exterior. A quick and easy bakery style pastry made at home.

    I highly recommend using weight (metric) measurements when available for more accuracy and the best results.

    When using 2x or 3x ingredients, the grams in parenthesis DO NOT adjust, you will have to manually do that.

    Ingredients
      

    • 1 sheet frozen puff pastry defrosted
    • 2 ounces block cream cheese (56g)
    • 1 tablespoon everything bagel seasoning** (8g)
    • 1 large egg + 1 tablespoon water

    Instructions
     

    • Preheat the oven to 425°F and line a baking sheet pan with parchment paper.
    • Place the cream cheese (2 ounces/56g) in a bowl, add 1 ½ teaspoons everything bagel seasoning and stir to combine.
    • Lightly dust your working surface with flour and lay the cold (defrosted) puff pastry on the floured surface. If needed, give the puff pastry a light roll with a rolling pin.
    • Spread a thin layer of the everything cream cheese over the puff pastry.
    • Cut the puff pastry into six triangles. I find it helpful to cut three rectangles first, then slice each rectangle into two triangles. See the video if you need a tutorial.
    • Starting at the long end of the triangle, gently roll each triangle into a croissant shape.
    • Place the croissants on the prepared baking pan, leaving a little space between each pastry.
    • In a small bowl, whisk together the egg (1 large) and 1 tablespoon of water. Then brush the egg wash onto each croissant and sprinkle with the remaining everything bagel seasoning (1 ½ teaspoons).
    • Bake in the preheated oven for 20-25 minutes, until puffed and golden brown.

    Notes

    I did not test this recipe with refrigerated puff pastry, but suspect it should work fine.
    * This recipe easily doubles to make 12 mini croissants.
    **If you need to make your own everything bagel seasoning; mix 1 tablespoon poppy seeds, 1 tablespoon sesame seeds, 2 teaspoons onion flakes, 2 teaspoons garlic flakes and ½ teaspoon kosher salt.
    The everything croissants are best eaten 20-30 minutes after baking, but are also delicious at room temperature.  Store any leftover croissants in an airtight container in the refrigerator for up to five days.
    The croissants can be warmed in the oven or an air fryer. I use my Breville counter oven set at 350°F for five minutes.
