Gather the ingredients

Make the espresso graham cracker crust.

Using a handheld mixer or stand mixer, beat the room temperature cream cheese, granulated sugar and instant espresso powder on medium until the mixture is smooth and creamy.

Then add the cornstarch, sour cream and vanilla and beat another minute, until fully combined.

Now add the eggs one at a time, beating until just blended. Then pour the cheesecake mixture into the pre-baked graham cracker crust.

Once the espresso cheesecake has cooled and then chilled for at least six hours, make the espresso whipped cream.

Decorate as desired, then slice and serve.
