These easy chocolate chip sugar cookies are soft and chewy and loaded with mini chocolate chips. Made without brown sugar, they can be cut-out cookies or slice and bake. The best cookie recipe that is also perfect for decorating.

Gather the ingredients

Using a hand mixer or a stand mixer fitted with the paddle attachment, beat the butter and kosher salt until combined. Then add in both sugars and beat until smooth.

Now scrape up and down the bowl, then beat in the egg and vanilla and mix until well combined.

With the mixer on low, add the flour mixture a little at a time.  When the dough has started to come together, but is still showing some flour add the mini chocolate chips.

Now mix until combined and the dough starts to ball up on the paddle. The dough should be soft, but not sticky.

Chill the dough for at least 30 minutes.  Then roll out and bake. See the recipe card for how to make slice and bake cookies.
