Bake the cheesecake in the center of the oven for 50-60 minutes, or until the center is almost set. Turn the oven off and leave the door slightly open. Let the cheesecake cool in the oven for 30-60 minutes.
Once cool, spread white chocolate ganache over the cooled cheesecake with an offset spatula. Take the sprinkles you set aside and sprinkle them over the top of the white chocolate ganache. Chill at least 6 hours.
